No-Bake Strawberry Cheesecake

To celebrate the beginning of a beautiful summer, we created this delicious and creamy no-bake strawberry cheesecake! It is velvety, has a mousse-like texture, and is packed with fresh strawberries, which makes it the perfect dessert for summertime! 

Did you know that the very first strawberry garden was grown in France during the late 18th century? Nutrient-rich, strawberries provide plenty of vitamin C, fiber, potassium, magnesium, and are packed with antioxidants. Graham Cracker Crust

3.5 oz (100g) - Graham crackers

½ cup (50g) - Feuilletine

2.5 oz (70g) - Butter (melted)

3.5 oz (100g) - Macadamia nuts


Strawberry Cream Cheese Filling

0.8 oz (24g) - Water

1 tsp (4.5g) - Gelatin powder

5.6 oz (160g) - Strawberries

2.6 oz (75g) - Cream cheese (room temperature)

1.5 oz (43g) - Monk fruit sweetener

2.8 oz (80g) - Heavy cream

4 oz (113g) - Coconut cream

1 tbsp (15ml) - Lemon juice

We advise that you prepare all the above ingredients before starting.

You will typically need: a scale, measuring cups, mixing bowls.


Graham Cracker Crust

1 - To a high-speed blender, add the graham crackers alongside the macadamia and blend until finely ground.

2 - Transfer the graham crackers mix into a mixing bowl. Then, add the feuilletine and melted butter and stir everything together using a silicone spatula

Tip: We store our ingredients in these mixing bowls and mini glass bowls from Duralex while cooking. We love Duralex for their quality products and low prices!

3 - Place 4 cake rings on a tray lined with parchment paper. Then, cut pieces of cake collar and place one inside each cake ring.

4 - Add about 2½ tbsp of the graham crackers mixture into each cake ring and press the crumbs down with your fingers to form an even crust. Finally, refrigerate until needed.

 

Strawberry Cream Cheese Filling

1 - Pour the water into a small bowl, mix in the gelatin powder and set it aside. 

2 - Hull the strawberries using a sharp paring knife and blend them into a smooth purée.

3 - To a stand mixing bowl, add the cream cheese and the monk fruit sweetener. Then, whisk on medium speed until smooth.

4 - Set to low speed and slowly incorporate the heavy cream. Then, set back on medium speed and whip until nice and fluffy. 

5 - Scrape the edges of the bowl using a silicone spatula (or a bowl scraper), add the coconut cream, and whisk on medium speed until well incorporated.

6 - While mixing, slowly pour the strawberry purée and whisk until well combined. 

7 - Finally, melt the gelatin for about 10 seconds in the microwave. Add it to the strawberry filling alongside the lemon juice and whisk until well combined.

8 - Transfer the filling into a pouring jug. Then, fill up the cake rings evenly until you used up all the cream cheese filling. Then, transfer the cheesecake into the refrigerator for a minimum of 4 hours.

9 - When ready to be served, remove the cake ring, transfer the cheesecake to a plate with an offset spatula and remove the collar. Finally, top with whipped cream and fresh strawberries.
