Fall is here and it is pumpkin season! Every fall, we all run to Starbucks to grab a warm cup of their pumpkin spice latte, or we go online looking for the best one.

Unfortunately, after a lot of research, most of the recipes we could find were made with refined sugar. At How To Cuisine, we love to find ways to transform traditional recipes into healthier versions.

This homemade pumpkin spice latte recipe is so easy and delicious. It does not contain any refined sugar, artificial flavors, or colors.

This recipe will teach you how to make your own pumpkin puree, as well as your own pumpkin spice syrup affordably. This large batch of syrup will allow you to easily make around 20 pumpkin spice lattes, depending on how much syrup you like in your latte.

You can store the syrup in the fridge for up to 1 month (or in the freezer for up to 6 months) in a closed food container.

Pumpkin Spice Latte

1 cup (215g) - Xylitol 

1 tbsp (6.5g) - Pumpkin spice

1½ cups (360g) - Water 

1 cup (240g) - Pumpkin puree

3 tbsp (20g) - Coffee beans

Hot water

We advise that you prepare all the above ingredients before starting.

You will typically need: a scale, measuring cups, mixing bowls.

 

Pumpkin Spice Latte

1 - Preheat the oven to 350℉ (175℃).

2 - Line a baking tray with parchment paper (or a silicone baking mat). Place the whole pumpkin on the tray and bake in the oven for 1 hour. After an hour, check it is ready by piercing it with a skewer. If it goes through easily, it is ready.

3 - Place the roast pumpkin on a cutting board, then slice and peel it with a sharp knife.

Tip: We recommend you use a paring knife for this task. Sabatier knives are excellent French blades we recommend for professional and home cooks. We also love this reversible cutting board with integrated hand grips from John Boos.

4 - Remove the seeds and cut into chunks. Then, transfer the pumpkin chunks to a high-speed blender and blend them into a puree.

Tip: Vitamix blenders are by far the best we have ever owned: Vitamix ExplorianVitamix Professional Series 750, and the new generation Vitamix A3500.

5 - To a large saucepan (or a saucier pan), add the xylitol, pumpkin spice, water and pumpkin puree. Give it a quick mix with a silicone whisk before transferring it to the stovetop. 

6 - Bring the syrup to a boil over medium heat, letting it boil for 1 minute. Then remove it from the heat and pass the syrup through a sieve into a large bowl

7 - Grind the coffee beans to your liking and add to a French press. Fill with boiling water and allow to brew for 10 minutes.

Cold Pumpkin Spice Latte

1 - To a glass, add 2 tablespoons of the pumpkin syrup, followed by cold milk and cooled freshly brewed coffee. Finally, sprinkle over a pinch of pumpkin spice.

Hot Pumpkin Spice Latte with Frothed Milk

1 - Pour hot freshly brewed coffee into a coffee mug and stir in 2 tablespoons of the pumpkin syrup.

2 - Bring the milk up to boil, transfer it into a clean French press and top with the lid. Pump the press vigorously to incorporate air into the milk. Remove the lid and tap the jug to release the larger bubbles and homogenize the milk. 

3 - Tilt the coffee mug and pour your frothed milk over the coffee. Top with whipped cream, a pinch of pumpkin spice and pumpkin seeds.  

4 - Enjoy!
