Who doesn’t love delicious biscuits for breakfast or brunch?

Today, we are excited to share with you our first gluten-free biscuit recipe! These parmesan biscuits, just like cheddar biscuits, are very easy to make! All you need is 30 minutes and a few simple ingredients to whip up this delicious recipe. So grab some rolled oats, parmesan, and butter!

These tasty biscuits are perfect for snacking or serving alongside soup, salad, or entrées of all kinds!

Gluten-Free Parmesan Biscuits

12.7 oz (360g) - Rolled oats

1 tsp (5g) - Baking powder

1 tsp (5g) - Baking soda

1 pinch - Sea salt flakes

3 tbsp (30g) - Corn starch

1 tbsp (3g) - Oregano

3 oz (85g) - Butter

7 oz (200ml) - Soy milk

1 - Egg

4 - Garlic cloves

4 oz (113g) - Parmesan


Egg Wash

1 - Egg yolk

1 tbsp (15ml) - Milk

We advise that you prepare all the above ingredients before starting.

You will typically need: a scale, measuring cups, mixing bowls.


Gluten-Free Parmesan Biscuits

1 - Blend the oats until finely ground (flour-like consistency).

2 - To a stand mixer bowl, add the oat flour, baking powder, baking soda, sea salt flakes, corn starch, and dried oregano. Then, give it a quick stir to combine using a spatula.

3 - Add the cold butter to the flour mixture and mix with the paddle attachment until you obtain a crumbly consistency. 

4 - Turn off the stand mixer and pour in the soy milk and the egg. Then, mix everything together until just combined.

5 - Crush and peel the garlic cloves. Then, finely mince them and add them to the biscuit dough alongside the parmesan. Mix one more time to combine.

6 - Transfer the biscuit dough to a floured surface and flatten it to 2 inches (5 cm) thick. Portion the biscuit using a cookie cutter. Next, reshape the dough and repeat the cutting process until you used up all the dough.

7 - Transfer the biscuits onto baking tray lined with parchment paper (or a silicone mat) and refrigerate for 1 hour.

 

Egg Wash 

1 - Into a small bowl, whisk together one egg yolk and a tablespoon of milk. 

Tip: We store our ingredients in these mixing bowls and mini glass bowls from Duralex while cooking. We love Duralex for their quality products and low prices!

2 - Brush the biscuits with egg wash using a pastry brush (boar/silicone).

3 - Add more parmesan on top of each biscuit and bake in a 350°F (175°C) preheated oven for about 25 minutes.
