Easy Cauliflower Pizza Crust: Low-Carb & Gluten-Free Recipe

At How To Cuisine, we like to put a healthy twist on traditional recipes, and pizzas are among the easiest recipes to apply this principle to. 

Cauliflower pizza crusts are a delicious low-carb, gluten-free, and even keto alternative to traditional pizza. They are simple blends of cauliflower, eggs, cheese, oat flour, and a few spices of your choice. The crust is then flattened and baked into a golden crust. Once baked, you can freeze it for up to 1 month or directly top it off with a tasty homemade pizza sauce and fresh cheese.

Please remember that cauliflower crust is not going to be crispy like traditional pizza dough. Indeed, the cauliflower will naturally make it softer.

Cauliflower Pizza Crust

1 cup (115g) - Grated orange cauliflower

1 cup (115g) -  Grated white cauliflower

½ cup (50g) - Oats

1 cup (100g) - Parmesan

1 tsp (5g) - Baking soda

1 tsp (3g) - Baking powder

 

Parsley Pizza Sauce

3 - Tomatoes

1 - Shallot

3 - Garlic cloves

½ cup (120ml) - Water

1 tsp (6g) - Himalayan salt

1 tbsp (12g) - Xylitol

1 tbsp (3.5g) - Rosemary

2 tbsp (36g) - Tomato paste

0.7 oz (20g) - Parsley

We advise that you prepare all the above ingredients before starting.

You will typically need: a scale, measuring cups, mixing bowls.


Cauliflower Pizza Crust

1 - Finely grate the yellow and white cauliflower using a box grater.

2 - Next, preheat a cast-iron skillet. When hot, add the grated cauliflower and cook on medium heat for about 3 minutes. During the cooking process, make sure to continuously stir the cauliflower with a silicone spatula so it can cook evenly.

3 - Once cooked, transfer to a large mixing bowl and set aside.

4 - Blend the oats until finely ground (flour-like consistency) and add them to the cauliflower.

5 - Next, add the grated parmesan, baking powder, and baking soda to the cauliflower. Then, mix until well combined using a silicone spatula.

6 - Crack in the egg and stir until you obtain a pasty consistency.

7 - Transfer to a pizza tray lined with parchment paper. Then, press down to flatten the mixture and shape it into a pizza-like crust. Finish pressing the crust using a spatula for even thickness.

8 - Transfer in a 380°F (193°C) preheated oven and bake for 20 minutes. After 20 minutes, place another sheet of parchment paper on top of the crust, flip it, remove the other sheet, and place it back in the oven for about 5 minutes.

 

Parsley Pizza Sauce

1 - Fill up a saucepan (or like us a saucier pan) with water and bring it to a boil. Then, prepare a large mixing bowl of ice water and set it aside.

2 - Using a sharp knife, do a cross nick on the tomatoes' bottom and place them in the boiling water to cook for 3 minutes. After 3 minutes, transfer them into the ice water to cool.

3 - While the tomatoes are cooling, peel and chop the shallot before setting it aside.

4 - Crush and peel the garlic cloves and set them aside.

5 - Take the cooled tomatoes and peel their skin off. Next, roughly chop them and transfer them to a saucepan, alongside the garlic cloves and shallots.

6 - To the saucepan, add all the remaining ingredients, except for the parsley, and stir to combine using a silicone spatula. Place the saucepan over medium heat and allow to simmer for 10 minutes.

7 - Transfer to a blender and blend until nice and smooth. Next, add the fresh parsley and blend again until well combined. Transfer your sauce into a clean food container.

8 - Spread a generous amount of tomato sauce on your pizza crust using a spoon. Then, add the garnish of your choice. Here we added grated cheddar cheese with cherry tomatoes. Finally, place the pizza in the oven and bake for about 8 minutes at 380°F (193°C).
