Today, we are excited to share with you one of our favorite winter soup recipes: a butternut sweet potato soup recipe!

Many people cook butternut squash on the stovetop, but our favorite method is to roast it in the oven. It will give it a greater depth of flavor.

This healthy butternut squash soup is also vegan! It is so delicious and addicting that the whole family will want more, even the kids!

Butternut Sweet Potato Soup

1 - Butternut squash

1 - Sweet potato

1 - Onion

1 - Apple

4 - Garlic cloves

2 cups (495ml) - Vegetable broth

2 cups (480ml) - Water

13.5 oz (400ml) - Coconut milk

2 tbsp (40ml) - Maple syrup

To taste - Cilantro

To taste - Himalayan salt

We advise that you prepare all the above ingredients before starting.

You will typically need: a scale, measuring cups, mixing bowls.


Butternut Sweet Potato Soup

1 - Preheat the oven to 400°F (200°C).

2 - Cut the edges of the butternut squash using a sharp knife. Next, peel it using a peeler and roughly chop it.

3 - Add the chopped butternut squash to baking tray lined with parchment paper (or a silicone mat) and transfer it to a 400°F (200°C) oven to bake for about 30 minutes.

4 - Meanwhile, peel and chop the sweet potato as well as the onion. Add them to a large pot (or like us a cast iron dutch oven) and fill it with water. Place it over high heat and cook until tender.

5 - Roughly chop the apple, making sure to remove the core. Crush and peel the garlic cloves.

6 - Finally, add all the ingredients to a blender and blend for a couple of minutes until the soup is nice a smooth.

7 - Serve the soup in a soup bowl and garnish it with fresh cilantro.
