In today’s video, learn how to make this healthy pineapple chicken recipe!

What makes this pineapple chicken different? Well, the pineapple sauce has a base of chicken stock, also commonly called bone broth. This superfood ingredient has many health benefits and contains many important vitamins and minerals. However, the nutrient content will depend on the ingredients used, as each will bring something different to the table.

    Pineapple Chicken

    11 oz (310g) - Pineapple

    1 cup (240ml) - Water

    1½ cups (360g) - Chicken stock

    2 oz (57g) - Corn starch

    ½ - Onion

    4 - Garlic cloves

    2 tbsp (30g) - Olive oil

    To taste - Sea salt

    22 oz (623g) - Chicken breast

    5 oz (140g) - Pineapple (diced)

    ½ cup (120ml) - Beer

    To taste - Sesame seeds

    We advise that you prepare all the above ingredients before starting.

    You will typically need: a scale, measuring cups, mixing bowls.


    Pineapple Chicken

    1 - To a high-speed blender, add the 11 oz (312g) of pineapple as well as the water and blend until smooth.

    2 - Then, add the chicken stock as well as the cornstarch to the pineapple juice and blend until well combined before setting aside. 

    3 - Peel and mince the onion and the garlic using a sharp knife and set aside.

    4 - Place a large pot (or like us a cast iron dutch oven) on medium heat and add in the olive oil. When the oil is hot and starts bubbling, add the minced onion and stir with a spatula to coat it completely with oil. Then, allow the onion to cook for about 3 minutes.

    5 - Add some salt alongside the minced garlic. Stir to combine and allow to cook for another 3 minutes. 

    6 - Add the chicken breast to the onion and cook for about 9 minutes.

    Tip: Stir from time to time to make sure nothing sticks to the bottom of the pot. 

    7 - Stir in the diced pineapple and the beer. Then, allow it to cook on medium heat for at least 5 minutes. 

    8 - Finally, add the pineapple sauce, bring it to a simmer, and allow it to cook for an additional 8 minutes. 

    9 - Serve with pasta or rice and sprinkle some sesame seeds and parsley on top.
