Gluten Free Brownie & Matcha Frosting

At How To Cuisine, we want to make pastries for everyone, and we love a good challenge. Making a true fudgy brownie without flour or dairy is no easy task, but we finally did it! 

Discover this gluten-free fudgy brownie and its dairy-free matcha frosting. 

It came out so rich, fudgy, and chocolaty that no one will be able to tell there is no gluten in it! 

And to accompany this tasty brownie, we made a healthy dairy-free matcha frosting. It is very creamy and rich in delicious matcha flavor. We highly recommend you try it with any brownie or chocolate cake recipes. 

Once baked, keep it in the fridge and place it in the microwave for about 20 seconds before eating it. It will be like it came right out of the oven.

Gluten-Free Brownie

2 - Eggs

2 tbsp (35ml) - Maple syrup

½ cup (70g) - Coconut sugar

1 cup (120g) - Almond flour

2 tbsp (20g) - Corn starch

½ cup (45g) - Cocoa powder

1½ tsp (6g) - Baking powder

½ cup (100ml) - Coconut oil

4.4 oz (125g) - Dark chocolate


Dairy-Free Matcha Frosting

1½ cups (220g) - Cashews

¼ cup (53ml) - Coconut oil

⅓ cup (85ml) - Almond milk

3 tbsp (63ml) - Maple syrup

3 tsp (20g) - Matcha

We advise that you prepare all the above ingredients before starting.

You will typically need: a scale, measuring cups, mixing bowls.

 

Gluten-Free Brownie

1 - Preheat your oven to 340°F (170°C).

2 -  Crack the eggs into a large mixing bowl, add the maple syrup and coconut sugar, and whisk until well combined. 

Tip: We store our ingredients in these mixing bowls and mini glass bowls from Duralex while cooking. We love Duralex for their quality products and low prices! 

3 - Next, add the almond flour, corn starch, cocoa powder, and baking powder to the bowl and mix vigorously until homogeneous.

4 - Add the melted coconut oil and gently mix to combine using a whisk or a silicone spatula.

5 - Then, roughly chop the dark chocolate and stir it inside the brownie batter using a spatula.

6 - Grease a cake ring with grapeseed oil (or butter) and place it on a baking tray with parchment paper (or a silicone mat). Then, place a piece of parchment paper all around the sides.   

7 - Pour the brownie batter inside the cake ring and spread it evenly using your silicone spatula. Finally, transfer to the oven and bake at 340°F (170°C) for about 25 minutes.

8 - Once baked, gently remove the cake ring and parchment paper from the brownie, and let it cool completely at room temperature. 

 

Dairy-Free Matcha Frosting

1 - Add the cashews to a large mixing bowl, cover them with water and let them soak for at least 8 hours. 

2 - Strain the cashews with a sieve and pour them into a high-speed blender.

3 - Add the melted coconut oil, almond milk, maple syrup, and matcha powder. Then, blend until smooth and homogeneous. 

4 - Transfer the frosting on top of the brownie and spread it evenly using an offset spatula

5 - Enjoy!
