Vanilla Magic Cake

This magic vanilla custard cake is incredible!

A "Gâteau Magique" (French for "Magic Cake") is inspired by the "Gâteau Millasson" (Gascon-Style Flan), a traditional cake from the south of France.

This cake batter is so easy to make and is literally magic! With this recipe, you’ll get a beautiful 3 layer cake with a delicious sponge, custard, and fudge.

For our first magic cake, we decided to try the traditional flavor: vanilla with a pinch of rum.

Vanilla Magic Cake

4 - Eggs

​​3.5 oz (100g) - Xylitol

¼ tsp (0.6g) - Vanilla powder

1½ tsp (6g) - Vanilla extract

1 tsp (4g) - Rum

4.4 oz (125g) - Butter

4.6 oz (130g) - Flour

17.6 oz (500g) - Milk

We advise that you prepare all the above ingredients before starting.

You will typically need: a scale, measuring cups, mixing bowls.

  

Vanilla Magic Cake

1 - Preheat your oven to 320°F (160°C).

2 - Separate the egg whites from the yolks. Then, add the whites into a mixing bowl and the yolks into a stand mixer bowl. 

Tip: We store our ingredients in these mixing bowls and mini glass bowls from Duralex while cooking. We love Duralex for their quality products and low prices!

3 - Add the xylitol to the yolks and whip for 5 minutes using the whisk attachment.

4 - Next, add the vanilla powder, vanilla extract, and rum to the whipped egg yolks and whip until well combined. 

5 - Melt the butter in the microwave and slowly pour it over the yolk mixture while continuously whisking. 

6 - Add half of the flour, one spoon at a time, while mixing. Pour half of the milk, then the remaining flour, and finally the rest of the milk. 

7 - Keep the stand mixer running and whip the egg whites until stiff peaks using an electric mixer.

Tip: We recommend this 7-speed hand mixer from KitchenAid for its quality and elegant design. 

8 - Then, slowly add the egg whites to the cake batter with a silicone spatula and mix until just combined.

9 - Generously grease a cake pan with butter or neutral oil, add a piece of parchment paper to the bottom and pour the cake batter in it. 

10 - Finally, bake the magic cake at 320°F (160°C) for about 1 hour. Once baked, let the cake cool at room temperature and place it in the refrigerator for at least 2 hours before unmolding it.
