Pumpkin Scones
2 cups (250g) - Flour
⅓ cup (30g) - Sugar
2 tsp (4g) - Baking powder
1 tsp (2g) - Ground ginger
½ tsp (1g) - Nutmeg
1 tsp (2g) - Clove
1 tsp (2.5g) - Cinnamon
6 oz (170g) - Butter
1 - Egg
⅓ cup (75g) - Pumpkin puree
2 tbsp (30g) - Heavy cream

We advise that you prepare all the above ingredients before starting.
You will typically need: a scale, measuring cups, and mixing bowls.
Pumpkin Scones
1 - Weigh 6 oz (170g) of butter with a scale, and place it in the freezer for at least 15 minutes before starting the recipe. We love the practicality of this elegant dual-platform digital scale from KitchenAid.
2 - Preheat your oven to 375°F (190°C).
3 - In a large mixing bowl, combine the flour, sugar, baking powder, ground ginger, nutmeg, clove, and cinnamon. Whisk lightly. You may also use a paddle-equipped stand mixer for this recipe. The KitchenAid Artisan Design Series and the KitchenAid Professional 600 Series are superstars among stand mixers and will look amazing in your kitchen!
Tip: We store our spices in these mini glass bowls from Duralex while cooking.
4 - Grate all the butter and place it in the fridge while you prepare the other ingredients (or for approximately 20 minutes).
Tip: Make sure the butter is very cold before adding it to the dough. It will help the scones to rise properly in the oven.
5 - In a medium bowl, combine the egg, pumpkin puree, and heavy cream. Mix until the mixture is smooth and well combined.
6 - Add the butter to the flour mix (step 3), and gently combine the two with your hands until the texture becomes crumbly.
7 - Add the liquid mix (step 5) and incorporate everything together with a spatula.
8 - Place the dough directly on your countertop (or between two sheets of parchment paper) and shape it into a 1-inch (2.5cm) thick circular shape with your hands.
9 - Cut 6 smaller scones out of it using a bench knife.
Tip: You can find our recommended bench knives here: metal/plastic/wood, and plastic scrapers here.
10 - Place the scones in a baking pan and bake them at 375°F (190°C) for 20 minutes.
11 - Once ready, allow the scones to cool down on a cooling rack before adding any glaze topping.
12 - Add your desired topping. We went for a nice homemade maple glaze in this recipe. If you don't feel like making your own, we suggest this tasty Vermont maple syrup.
