Sprouted Lentil Salad

Have you ever eaten sprouted lentils? This delicious salad is packed with nutrients and flavor! With its delicious crunchy side, this high-protein salad does not contain any gluten and is perfectly suited to the vegetarian diet, but also to people who like salad in general and want a varied nutritional intake.
What are the benefits of eating sprouts?
Sprouts are known to be low in calories and rich in nutrients. Indeed, the sprouting process contributes to increased nutrient levels by breaking down some of the starch. This makes sprouts richer in manganese, protein, magnesium, and vitamins than non-germinated plants.
Sprouting will also break down phytate, a form of phytic acid that can decrease the absorption of minerals and vitamins in the body.
In addition to this, sprouts offer a number of health benefits. They improve blood sugar pressure, lower risks of heart disease, and improve digestion.

Sprouted Lentils Salad
5 oz (140g) - Sprouted black lentils
5 oz (140g) - Sprouted green lentils
2 - Tomatoes
1 - Cucumber
½ - Apple
1 - Shallot
1 - Avocado
4 - Eggs
½ cup (75g) - Feta
¼ cup (25g) - Nutritional yeast
2 tbsp (30ml) - Apple cider vinegar
3 tbsp (30ml) - Olive oil
1 pinch - Sea salt flakes
Topping:

We advise that you prepare all the above ingredients before starting.
You will typically need: a scale, measuring cups, mixing bowls.
Sprouted Lentils Salad
1 - Add the eggs into a saucepan (or like us a saucier pan) and cover them with cold water. Then, bring it to a boil. Once the water starts boiling, cook the eggs for 10 minutes. Once cooked, transfer them to a bowl filled with cold water.

2 - Dice the tomatoes, the yellow bell pepper, and the apple. Set them aside.

3 - Peel and dice the cucumber with a peeler and the avocado with a knife before setting them aside.

4 - Peel the shallot and finely slice it using a mandoline.
5 - Combine all the ingredients in a large bowl and mix everything together using cooking tongs.
6 - Next, peel the eggs once they have completely cooled. Finally, dice the eggs and mix them into the salad using the cooking tongs.
7 - Plate the salad and garnish it with fresh cilantro.
8 - Enjoy!
