Rainbow French Meringues

In today’s recipe, we are showing you the secret to making perfect French meringues.
These beautiful meringues are light and perfect to enjoy with a cup of tea.
These are flavored with strawberry sauce, although you can customize this recipe with any flavor you like.
Easy to make, you can do these cute and colorful rainbow meringues at home anytime.

French Meringue
3 - Egg whites
⅔ cup (130g) - Sugar
⅓ cup (80ml) - Water
1 pinch - Salt
Rainbow Coloring
Few drops - Food coloring of your choice
½ tbsp (10g) - Vanilla paste
Strawberry Sauce
4 oz (115g) - Frozen strawberries
⅓ cup (80ml) - Water
Glaze
½ cup (60g) - Powdered sugar
1 tbsp (15g) - Milk

We advise that you prepare all the above ingredients before starting.
You will typically need: a scale, measuring cups, and mixing bowls.
Strawberry Sauce
1 - Combine the frozen strawberries with the water in a food processor and mix until nice and smooth. Here we are using the excellent Breville Sous Chef food processor.
2 - Place the strawberry sauce in a saucepan (or a saucier pan) over medium heat and cook for 15 minutes. Then, chill for at least 20 minutes.
Tip: It has to be completely cold at this point.
French Meringue
1 - Preheat the oven to 245°F (120°C).
2 - Separate the egg yolks from the egg whites using mixing bowls.
3 - Place your egg whites in a stand mixer bowl with a small pinch of salt, and start whipping at medium speed. When bubbles start to form and the eggs start to rise, slowly incorporate all the sugar and finish whipping at full speed until peaks form and hold.
Tip: The KitchenAid Artisan Design Series and the KitchenAid Professional 600 Series are superstars among stand mixers and will look amazing in your kitchen! You may also use a hand mixer.
4 - Separate your meringue into 5 containers. In 3 of them, add a few drops of the food coloring of your choice, in 1 add the vanilla paste, and slowly pour about 1 tablespoon of strawberry sauce in the last one. Be careful, if you add too much, your meringue will become too loose. Mix each container using a spatula.
5 - On a plastic wrap, lay all the different colored meringues in strips (except the strawberry one), and roll them together. Place the resulting meringue in a piping bag and shape your meringues with the tip of your choice on a baking mat (with a baking tray underneath).
6 - Place the strawberry sauce meringue in a separate piping bag and shape your strawberry meringues like cute small hearts, or any other shape you like!
7 - Bake the meringues at 245°F (120°C) for 45 minutes.
Glaze
1 - Combine the sugar and the milk together, and stir with a whisk. Dip the top of the meringues in the glaze using a skewer.
Tip: The meringues have to be cold.
