We advise that you prepare all the above ingredients before starting.
You will typically need: a scale, measuring cups, and mixing bowls.
Scones
1 - Grate your frozen butter with a box grater and chill it for at least 1 hour.
2 - Combine the dry ingredients (flour, clove, baking powder, and dark brown sugar) in a large mixing bowl and stir.
3 - Combine the wet ingredients (egg, heavy cream, and honey) in a small mixing bowl with the help of a spatula, and mix everything together with a whisk.
4 - Incorporate the butter into the dry ingredients. You can do it by hand or with a stand mixer. The KitchenAid Artisan Design Series and the KitchenAid Professional 600 Series are superstars among stand mixers and will look amazing in your kitchen!
Tip: If you do it by hand, make sure not to over mix or the heat of your hands will start to melt the butter.
5 - When a crumbly texture is reached, pour the wet ingredients (step 3) into the dry ones and gently combine everything together with a spatula.
6 - When the dough starts to form, lay it on your countertop and spread the scone dough with your hands until it is 1 inch (2.5 cm) thick.
7 - Cut the dough into alternate triangular shapes and place them on a baking mat with a baking tray underneath.
8 - Brush the scones with heavy cream using a pastry brush (boar/silicone), and bake them at 400°F (200°C) for 20 minutes. When ready, let them cool down completely on a cooling rack (with a baking tray underneath) before topping them with the glaze.
Glaze
1 - In a small bowl, mix the milk and powdered sugar with a whisk.
2 - Glaze your scones with a spoon, or you may dip your scone directly in the glaze for extra sweetness.
3 - Before the glaze dries, zest the orange on top of the scones with a zester.
4 - Enjoy!
