Today we are sharing with you this tasty and original dinner roll recipe, also called bread rolls.

Made with delicious matcha and a tasty red bean filling, this bread roll recipe is one of our favorites out there.

You can of course customize your dinner rolls to your liking. If you don’t like matcha, you can easily replace it with another spice like ginger, paprika, or even curry. You also don't have to put the red bean filling in your buns, you can simply use it as a side!

But if you are a matcha lover, we can assure you these are the best matcha dinner rolls you’ll ever eat!

Dark Red Bean Filling

8 oz (234g) - Red beans

1 - Lemon juice

2 tbsp (22g) - Olive oil

¼ tsp (1g) - Smoked paprika

½ tsp (3g) - Sea salt

½ tbsp (13g) - Honey

 

Matcha Dinner Rolls

1 cup (240ml) - Milk

½ cup (120ml) - Water

¼ cup (53g) - Sugar

2½ tsp (9g) - Active dry yeast

2 oz (85g) - Melted butter

1 - Egg

4½ cups (635g) - Flour

2 tsp (12g) - Salt

½ tbsp (4g) - Matcha powder

 

Egg wash

1 - Egg yolk

1 oz (30g) - Milk

We advise that you prepare all the above ingredients before starting.

You will typically need: a scale, measuring cups, and mixing bowls.

 

Dark Red Bean Filling

1 - In a food processor, add the red beans, squeezed lemon, olive oil, smoked paprika, kosher salt, and honey. Mix for 30-60 seconds until well combined. Here we are using the excellent Breville Sous Chef food processor.

2 - Pour the mixture into a bowl using a spatula

3 - Place a sheet of food wrap on a plate so it covers the entire surface. We love the timeless elegance of marble and recommend these cute marble plates (porcelain/melamine).

4 - Arrange 8 portions of the mixture from step 2 using a tablespoon.

5 - Freeze for 1 hour. 

 

Matcha Dinner Rolls

1 - Preheat the oven to 350°F (175°C).

2 - Pour the milk and water into a measuring cup. Pyrex is the gold standard of measuring cups, we love their quality and durability!

3 - Microwave for 1 minute. 

4 - Add the sugar, active dry yeast, and melted butter. Stir with a fork to combine the three. Let it rest for 15 minutes. 

5 - Pour the flour, matcha powder, and salt into a stand mixing bowl and whisk a few times. 

6 - Crack an egg in a bowl and whisk it with a fork. Pour the egg mixture into the mixture from step 3. 

7 - Pour the mixture from step 5 into the stand mixing bowl mixture from step 4. 

8 - Knead everything on medium speed for 10 minutes until gluten has developed (meaning you can stretch the dough and see through). The KitchenAid Artisan Design Series and the KitchenAid Professional 600 Series are superstars among stand mixers and will look amazing in your kitchen!

9 - Place the dough on a flat surface and start rolling. Continue until a nice round loaf forms. Learn how to roll the dough here

10 - Pour some vegetable oil into a mixing bowl and coat the inside with your fingers. Place the loaf inside the bowl and cover it with a kitchen towel. Allow it to proof for 1 hour. 

11 - Lay the dough on a flat surface and flatten it with your hands. Roll it back another time until it turns back into a round loaf again. This helps make the dough fluffier. 

12 - Cut the loaf in half with a bench knife (or scraper) three times in a row while rolling the dough back to a round shape each time in between. You can find our recommended bench knives here: metal/plastic/wood, and plastic scrapers here

13 - Flatten the buns and place the red bean filling between each pair of buns like you are making mini sandwiches. Roll the dough back to a round-shaped loaf every time.  

14 - Place a Silpat baking mat on a baking tray and arrange the buns for baking.

15 - Cover them with a kitchen towel and proof them for 1 hour. 

16 - Brush the buns with egg wash using a pastry brush (boar/silicone) and sprinkle some kosher salt on top.  

17 - Bake at 350°F (175°C) for 20 minutes.
