Lemon Poppy Seed Cake

Lemon cake and lemon poppy seed cake are among the most popular cake recipes. These cakes are easy to make, very citrusy, moist, and rich.

We love to eat a good slice of lemon cake for our after-work snack. Made from simple everyday ingredients, this easy lemon loaf recipe will be your new favorite!

Lemon Loaf

4.4 oz (125g) - Butter

2.1 oz (60g) - Xylitol

4 - Lemon 

1 - Egg

2.1 oz (60ml) - Maple syrup

9.8 oz (280ml) - Heavy cream

8.8 oz (250g) - Flour

3 tsp (12g) - Baking powder

2 tbsp (20g) - Poppy seeds


Lemon Icing

2.1 oz (60g) - Powdered monkfruit

6 tsp (30g) - Lemon juice

We advise that you prepare all the above ingredients before starting.

You will typically need: a scale, measuring cups, mixing bowls.


Lemon Loaf

- Preheat your oven to 325°F (160°C).

2 - Add the butter into a large mixing bowl and microwave it for about 30 seconds.

Tip: We store our ingredients in these mixing bowls and mini glass bowls from Duralex while cooking. We love Duralex for their quality products and low prices!

3 - Add the xylitol to the butter and zest the lemons using a zester. Then, whip the butter until fluffy using an electric mixer.

4 - Add the butter and maple syrup to the butter, and whip until fluffy.

5 - Slowly pour half of the heavy cream into your bowl while continuously mixing. Whip until thoroughly combined.  

6 - Add the flour, baking powder, and poppy seeds to the bowl and whisk until just combined. Then, add the rest of the heavy cream and whisk until well combined. 

7 - Line a loaf pan with parchment paper and transfer the cake batter onto it. 

8 - Smooth the surface evenly using an offset spatula and drive a small pairing knife in the center and across the loaf pan in a straight line.

9 - Transfer it to a 325°F (160°C) oven and bake it for about 1 hour. Once baked, soak the cake with the juice of 2 lemons before letting it cool completely at room temperature. 

 

Lemon Icing

1 - Combine the powdered monkfruit and lemon juice in a mixing bowl, and whisk until homogeneous. 

2 - Carefully unmold the cake and pour the lemon icing over it. Spread it across using a silicone spatula.

3 - Zest a lemon over the icing for extra citrus flavor.
