Italian Tiramisu With Homemade Ladyfingers

If you are a coffee lover, this recipe was made for you! Tiramisu is a timeless Italian dessert combining espresso-dipped ladyfingers and a creamy mascarpone mousse.

Store-bought ladyfingers are usually quite sweet and dry, which will likely make your tiramisu too sweet. But no worries, after viewing this recipe, everything you need to know about homemade ladyfingers won’t be a secret for you anymore!

For coffee recipes, there is nothing better than grinding your own coffee beans at home to amplify the flavors. Thus, we are also sharing with you how to grind coffee beans perfectly at home.

Coffee Syrup

1 oz (30g) - Coffee beans 

1 cup (240ml) - Water


Ladyfingers

2 - Eggs

¼ cup (50g) - Sugar 

1⅜ oz (40g) - Flour

Powdered sugar


Mascarpone Mousse

7½ oz (215g) - Mascarpone

7½ oz (215g) - Heavy cream

½ tsp (1.25g) - Vanilla powder

2 - Eggs

⅓ cup (80g) - Sugar

Cocoa powder

We advise that you prepare all the above ingredients before starting.

You will typically need: a scale, measuring cups, mixing bowls.

 

Coffee Syrup

1 - Place the coffee beans into a coffee grinder. We recommend this electric coffee bean grinder for its elegant design, high-quality stainless steel, and 200W powerful motor. 

2 - Grind for 10 seconds 3 times in a row, and transfer the ground coffee into a small bowl. The finer the grain, the stronger the flavors.

Tip: We store our ingredients in these mixing bowls from Duralex while cooking. We love Duralex for their quality products and low prices!

3 - Boil the water in a kettle and pour it over the coffee. Then, stir and let it infuse for at least 3 hours at room temperature. 

Tip: We like using this stovetop kettle because of its gooseneck spout, brushed stainless steel, and BPA-free plastic.


Ladyfingers

1 - Preheat your oven to 330°F (165°C).

2 - Separate the egg whites from the egg yolks.

3 - Pour the egg yolks with the help of a spatula, and half of the sugar into a stand mixer bowl. 

Tip: The KitchenAid Artisan Design Series and the KitchenAid Professional 600 Series are superstars among stand mixers and will look amazing in your kitchen!

4 - Whip the egg yolks for 6 minutes (or until light and fluffy) at full speed using the whisk attachment. 

5 - Meanwhile, pour the egg whites into a large mixing bowl and start whipping using a hand mixer. 

Tip: We recommend this 7-speed hand mixer from KitchenAid for its quality and elegant design.

6 - When small bubbles start to form, slowly pour the other half of the sugar while whipping. 

7 - Whip the egg whites until a small peak forms, like so.

8 - Once the egg yolks are nice and fluffy (step 4), incorporate them gently into the egg whites, one spatula at a time.

Tip: for this step, we advise you to use a silicone spatula. If you use a whisk, you run the risk of breaking all the air bubbles you created earlier.

9 - When the eggs are well combined, sieve the flour in and mix again using a spatula. 

10 - Place the ladyfinger batter into a piping bag with a tip

11 - Place a sheet of parchment paper on a baking tray and pipe 2 disks of ladyfinger matching the size of your tiramisu bowl, like so.

Tip: Here, we made both a small and a large disk to fit our bowl. 

12 - Sieve some powdered sugar on top, then bake at 330°F (165°C) for about 15 minutes.

13 - When baked, transfer the parchment paper with the ladyfingers on it, onto a cooling rack (with a baking tray underneath) to allow them to chill. 

 

Mascarpone Mousse

1 - Add the mascarpone to a large mixing bowl and soften it with a spatula. 

2 - Pour the heavy cream and the vanilla powder over the mascarpone. Whip until light and fluffy using a hand mixer. 

3 - Crack the eggs and add the sugar into a stand mixer bowl. Then, whip the eggs for 6 minutes (or until light and fluffy), using the whisk attachment and on full speed.

4 - Pour one half of the whipped eggs over the whipped mascarpone cream and whisk vigorously until well combined. 

5 - Pour the other half and gently combine it all using a spatula. 

 

Assembling The Tiramisu With The Homemade Ladyfingers

1 - Strain the coffee syrup to remove all the ground coffee.

2 - Soak the top of the ladyfingers with the coffee syrup, using a pastry brush (boar/silicone).

3 - Carefully place the smaller ladyfinger disk upside down in your bowl. Soak it generously with the coffee syrup, using the pastry brush.

4 - Pour a generous amount of the mascarpone mousse on top of the soaked ladyfinger and smooth it with a spatula. 

5 - Repeat a second time with the second ladyfinger disk and the rest of the mascarpone mousse.

6 - Refrigerate it overnight (or for a minimum of 4 hours).

7 - The next day, sieve some unsweetened cocoa powder on top.

8 - Enjoy!
