Gluten Free Zucchini Brownies

When we first made these gluten-free zucchini brownies a couple of months ago, we knew that we would never need another brownie recipe! 

What we love about zucchini brownies is that they are healthier than traditional brownies. If you have never had zucchini chocolate desserts, you will need to try this one! These zucchini brownies are unbelievably delightful, fudgy, and chocolaty! A chocolate lover's dream...

No one will ever guess there is zucchini in this homemade brownie recipe. They taste like the most decadent brownies ever!

Zucchini Brownies

10¾ oz (305g) - Zucchini (grated and squeezed)

¼ cup (24g) - Cocoa powder

1 tsp (7g) - Baking soda

2 tbsp (18g) - Coconut flour

1 tbsp (9g) - Almond flour

2 - Eggs

3 oz (85g) - Butter

1½ oz (35g) - Dark chocolate 

¼ cup (60g) - Sugar

¼ cup (80g) - Maple syrup

½ cup (115g) - Almond butter

1 tsp (3.5g) - Sea salt


Chocolate Ganache

7 oz (200g) - Dark chocolate

7 fl oz (200ml) - Heavy cream

2½ oz (75g) - Butter

We advise that you prepare all the above ingredients before starting.

You will typically need: a scale, measuring cups, mixing bowls.

 

Zucchini Brownies

1 - Preheat your oven at 330°F (165°C).

2 - Cut the stem and the bottom of the zucchini with a sharp knife on a cutting board. 

Tip: We recommend you use a paring knife for this task. Sabatier knives are excellent French blades we recommend for professional and home cooks. We also love this reversible cutting board with integrated handgrips from John Boos. 

3 - Finely grate the zucchini with a box grater.

4 - Place the grated zucchini in a strainer over a mixing bowl.

5 - Press the zucchini with a wooden spoon to squeeze out as much juice as possible. Set the zucchini aside and save the juice for future recipes.

Tip: Once you squeezed the juice, make sure to weigh the zucchini to get the right amount. 

6 - Combine the cocoa powder, baking soda, coconut flour, and almond flour in a mixing bowl. Then, give it a quick mix using a whisk and set it aside.

7 - Crack the eggs in a stand mixer bowl and set them aside. 

8 - Combine the butter and the dark chocolate in a bowl, microwave it for 1 minute, and mix everything together with a fork. Then, set it aside.

9 - Using the whisk attachment, whip the eggs (step 7) on medium speed for about 3 minutes until a light yellow foamy texture appears.

Tip: The KitchenAid Artisan Design Series and the KitchenAid Professional 600 Series are superstars among stand mixers and will look amazing in your kitchen! You may also use a hand mixer.

10 - Add the sugar while mixing and whisk for an additional 5 minutes until nice and fluffy.

11 - Transfer the whipped eggs into a large mixing bowl and add the maple syrup and the almond butter. Gently mix using a spatula

12 - Mix in the melted butter and dark chocolate mix, along with the grated zucchini.

13 - Add the cocoa powder mix (step 6) to the brownie batter and gently incorporate it.

14 - Transfer the brownie to a baking pan lined with parchment paper and bake it at 330°F (165°C) for about 25 minutes.

15 - Ounce cooked, sprinkle the sea salt on top, and let the brownie cool down in the pan at room temperature.

 

Chocolate Ganache

1 - Put the dark chocolate into a mixing bowl and microwave it twice for 30 seconds.

Tip: Melting the chocolate for 30 seconds at a time will prevent it from burning.

2 - Pour the heavy cream into a small saucepan (or like us a saucier pan) and bring it to a boil. 

3 - Pour the hot cream over the melted chocolate and emulsify it with a silicone spatula until the ganache is smooth and shiny.

4 - Add the butter and mix with your spatula until well combined.

5 - Pour the chocolate ganache over the brownie and spread it evenly over the entire surface with an icing spatula (or a silicone spatula).

6 - Sprinkle some freshly chopped walnuts on top of the ganache and chill it for about 1 hour.

7 - Unmold and portion your brownie. Here, we chose to make 9 large portions.

8 - Enjoy!
