Gluten Free Pumpkin Bread & Cream Cheese Frosting

In this new episode, we are showing you how to make the best gluten-free pumpkin bread from scratch with a delicious cream cheese frosting!

Homemade pumpkin bread is a favorite thanksgiving recipe packed with cinnamon spice and tons of pumpkin flavor. This gluten-free pumpkin bread recipe is one of our favorite gluten-free recipes and the icing on the cake is that it does not contain any refined sugar. This makes this easy pumpkin bread a delicious yet healthy recipe!

It is indeed slightly sweet thanks to the xylitol and the maple syrup. The spiced flavors really shine through, and although it is wonderfully moist, this gluten-free pumpkin bread is not too rich. Thus, you won't feel weighed down after eating a slice or two!

Gluten Free Pumpkin Bread

3 - Eggs

½ cup (100g) - Xylitol

15 oz (425g) - Pumpkin puree

3 oz (85g) - Butter

¼ cup (90g) - Maple syrup

2 tsp (8g) - Vanilla extract

3 cups (350g) - Almond flour

¾ cup (100g) - Corn starch

½ tsp (2g) - Salt

1 tsp (3.5g) - Xanthan gum

1½ tsp (8g) - Baking soda

1½ tsp (8g) - Baking powder

2 tbsp (12.5g) - Pumpkin spice


Cream Cheese Frosting

5 oz (145g) - Cream cheese

1 tbsp (15g) - Milk

2 tbsp (30g) - Honey

We advise that you prepare all the above ingredients before starting.

You will typically need: a scale, measuring cups, mixing bowls.

 

Gluten Free Pumpkin Bread

1 - Crack 3 eggs in a medium-size bowl, and break them up using a metal whisk until nice and smooth.

Tip: We store our ingredients in these mixing bowls and mini glass bowls from Duralex while cooking. We love Duralex for their quality products and low prices!

2 - Add the xylitol and pumpkin puree to the beaten eggs and whisk until well combined. 

3 - Microwave the butter for 1 minute. Then, pour it into the wet mixture and whisk to fully incorporate.

4 - Whisk in the maple syrup and vanilla extract before setting aside. 

5 - In a large mixing bowl, add all the remaining dry ingredients and whisk together with a silicone whisk.

6 - Add the liquid ingredients to the dry ingredients and gently mix together with a silicone spatula to form a thick, well-combined batter.

7 - Preheat your oven to 350℉ (175°C).

8 - Line a loaf pan with a sheet of parchment paper.

9 - Fill the loaf pan with the batter and spread evenly using a spatula.

10 - Bake the pumpkin bread in your preheated oven for 60 minutes, or until a toothpick comes out clean. 

11 - Once baked, allow the loaf bread to completely cool before unmolding it from the pan and transferring it to a serving platter.

 

Cream Cheese Frosting

1 - In a medium-size bowl, add the cream cheese, honey and milk. Stir together until smooth and fully combined.

2 - Serve the frosting with slices of pumpkin bread. Garnish with pumpkin seeds if desired.
