Sweet, buttery, and chewy, this gluten-free brioche is everything you ever dreamed of in gluten-free bread!

After many tries, we can finally introduce you to this incredible gluten-free french brioche recipe! To obtain this amazingly fluffy texture, you will need these 3 specific ingredients:

- Gluten-free flour blend: we have been using this gluten-free flour blend for years and love it for its good quality and reasonable price.
- Xanthan gum: this ingredient will give a nice chewy texture to your gluten-free brioche bread.
- Psyllium husk: quite a surprising name indeed, but so important in your gluten-free bread recipes! It will allow the bread to stay nice and moist while also preventing it from being crumbly.

Brioche Bread

13.4 oz (380g) - Milk

0.7 oz (19g) - Dry yeast

4.2 oz (120g) - Xylitol

0.35 oz (10g) - Psyllium husk

0.35 oz (10g) - Baking powder

0.35 oz (10g) - Xanthan gum

1 tsp (6g) - Sea salt

13.7 oz (390g) - Gluten-free flour

4 - Eggs

7 oz (200g) - Butter

 

Egg wash

1 - Egg yolk

1 tbsp (15ml) - Milk

We advise that you prepare all the above ingredients before starting.

You will typically need: a scale, measuring cups, mixing bowls.


Brioche Bread 

1 - Pour the milk into a measuring jug and microwave it for about 30 seconds, or until the milk becomes lukewarm. Mix in the dry yeast and set aside.

2 - To a stand mixer bowl, add the xylitol, psyllium husk, baking powder, xanthan gum, sea salt, and gluten-free flour. Give it a quick mix using a whisk, and set aside to rest for a least 5 minutes.

3 - After 5 minutes, crack the eggs into the dry ingredients, add the yeast mixture, and mix at medium speed for 6 minutes using the paddle attachment.

4 - Slow the stand mixer down to low speed and slowly incorporate the butter. Mix for an additional 6 minutes once you have added all the butter .

5 - Scrape the sides of the bowl with a spatula (or a bowl scraper), cover the bowl with a towel, and let the dough proof for 2 hours. After the first proof, remove the towel, cover the bowl with plastic wrap and refrigerate it for at least 5 hours (or overnight).

Tip: Help the planet by choosing biodegradable food wrap instead of plastic :)

6 - Generously flour your work surface and transfer the dough onto it. Then, flour the top of the dough and flatten it with your fingers.

7 - Next, portion the dough into 8 equal pieces using a bench scraper (metal/plastic/wood), and carefully shape each piece into a ball.

Tip: Make sure not to overwork the dough. The more you do, the more sticky it will become. For more details, watch the method we used here

8 - Grease a loaf pan with butter (or baking spray) and tightly arrange the brioche balls to fill the bottom of the loaf pan. 

Tip: Le Creuset is one of the best brands money can buy. Here we used this fantastic ceramic loaf pan from Le Creuset and are very happy with it!

9 - Cover the brioche with a kitchen towel or plastic wrap, and let the brioche proof overnight.

 

Egg Wash 

1 - Preheat the oven to 330℉ (165℃).

2 - Whisk one egg yolk together with a tablespoon of milk into a mixing bow. 

Tip: We store our ingredients in these mixing bowls and mini glass bowls from Duralex while cooking. We love Duralex for their quality products and low prices!

3 - Using a pastry brush (boar/silicone), brush the egg wash over the top of the brioche before transferring it to the oven to bake for about 1 hour.

4 - Once baked, allow the bread to cool slightly in the pan before transferring it to a cooling rack to cool completely.

5 - Enjoy!
