This banana muffins recipe will blow your mind! They are packed with banana flavor, very chewy, and ultra moist! It’s the perfect combination and every bite has the right amount of chocolate chips! 

In addition to being delicious, these healthy muffins are also gluten-free and do not contain any refined sugar, which makes this recipe the perfect healthy snack or breakfast! 

This banana recipe whips up just in a few minutes and requires only one bowl. Everything will be ready in less than 30 minutes! Fewer dishes and less prep time, we love it!

Gluten-Free Banana Muffins

3 - Ripe bananas

1 tbsp (15g) - Monk fruit sweetener

¼ cup (70g) - Almond butter

3 - Eggs

2 cups (260g) - Almond flour

3 tsp (18g) - Baking soda

1 pinch - Sea salt flakes

1 cup (158g) - Dark chocolate

1½ tsp (8g) - Apple cider vinegar

We advise that you prepare all the above ingredients before starting.

You will typically need: a scale, measuring cups, mixing bowls.

 

Gluten-Free Banana Muffins

1 - Preheat your oven to 350°F (176°C).

2 - Peel the bananas, add them to a large mixing bowl and mash them with a fork.

Tip: We store our ingredients in these mixing bowls and mini glass bowls from Duralex while cooking. We love Duralex for their quality products and low prices!

3 - Add the monk fruit sweetener to the mashed bananas and whisk until well combined. 

4 - Next, add the almond butter and whisk vigorously until homogeneous.

Tip: You may also use a hand mixer. We recommend this 7-speed hand mixer from KitchenAid for its quality and elegant design.

5 - Crack the eggs into the banana mixture and whisk until well combined. 

6 - Next, whisk in the almond flour, baking soda, and sea salt flakes.

7 - Roughly chop the dark chocolate using a sharp knife, add it to the batter, and stir everything using a silicone spatula until well combined.

8 - Finally, add the apple cider vinegar and gently stir until well incorporated. 

9 - Line a muffin pan with muffins liners and fill them with the batter using an ice cream scoop. Then, place a chocolate feve on each muffin and bake for about 15 minutes at 350°F (176°C). You should be able to make about 14 muffins. 

10 - Once baked, transfer the muffins to a cooling rack for a couple of minutes before tasting.
