6 oz (170ml) - Heavy cream

1 tsp (7g) - Sea salt

Cocoa powder

We advise that you prepare all the above ingredients before starting.

You will typically need: a scale, measuring cups, mixing bowls.

Chocolate Truffles

1 - Pour the heavy cream into a saucepan (or a saucier pan) and bring to a boil.

2 - Meanwhile, put the dark chocolate into a large mixing bowl and when the heavy cream has boiled, pour half of it over the chocolate. Then, start mixing using a spatula. Vigorously stir in circles, placing your spatula in the center of your mixing bowl to create an emulsion.

3 - When the chocolate is half melted, pour the remaining cream until you obtain a smooth, creamy, and shiny ganache.

4 - Finally, add the salt to the ganache and mix slightly. Then, cover with a plastic wrap and place it in the fridge for 1 hour.

5 - When the ganache is firm, portion all the truffles using a small cookie scoop. You should be able to get about 15 to 20 truffles depending on their size.

6 - Sieve the cocoa powder over a plate and place the chocolate truffles on top. Then, sieve more cocoa powder over the chocolate truffles and shake the plate to cover all the truffles with cocoa powder.

7 - Enjoy!
