Easy No-Bake Cream Cheese Key Lime Pie

This delicious homemade key lime pie is made with tasty no-bake cream cheese lime filling, soft and crunchy graham crackers crust, and creamy homemade vanilla whipped cream.

Graham Crackers Crust

5 oz (115g) - Butter

1 cup (140g) - Macadamia nuts

8 oz (225g) - Graham crackers

½ tbsp (7g) - Sea salt


Key Lime Filling

5 - Limes

24 oz (750g) - Cream cheese (room temperature)

14 oz (395g) - Sweetened condensed milk

1 cup (248ml) - Heavy cream


Vanilla Whipped Cream Topping

¾ cup (200ml) - Heavy cream

¼ cup (25g) - Powdered sugar

1 tsp (5g) - Vanilla paste

1 - Lime

We advise that you prepare all the above ingredients before starting.

You will typically need: a scale, measuring cups, and mixing bowls.

 

Graham Crackers Crust

1 - Preheat your oven to 350°F (175°C).

2 - Put the butter in a small bowl and microwave it for about 30 seconds, or until completely melted.

3 - Put the graham crackers, macadamia nuts, and kosher salt in a food processor. Then, blend everything together. Here we are using the excellent Breville Sous Chef food processor.

4 - Add the melted butter and blend again until well combined.

5 - Put all the crumbs in a pie plate and create the border of your pie using a spatula. We are showing you how here. For this recipe, we are using this Pyrex Pie plate, a quality glass plate at an affordable price. 

6 - Bake at 350°F (175°C) for about 25 minutes.

7 - When ready, let cool at room temperature.

 

Key Lime Filling

1 - Zest the 5 limes using a zester. Then, juice the limes with a manual juicer or a lemon squeezer.

2 - Put the room temperature cream cheese in a stand mixer bowl and mix using the paddle attachment until soft and creamy. The KitchenAid Artisan Design Series and the KitchenAid Professional 600 Series are superstars among stand mixers and will look amazing in your kitchen!

3 - Stir in the lime juice, the sweetened condensed milk, and the lime zests. Keep mixing until fully combined and set aside.

4 - Pour the heavy cream into a separate mixing bowl (or in your stand mixer bowl) and whip until the cream becomes light and fluffy. If you are not using a stand mixer, you may also use a hand mixer.

5 - Slowly incorporate the whipped cream into the cream cheese batter with a spatula.

6 - Pour the key lime filling into the crust and smooth the surface with your spatula.

7 - Chill for 2 hours before tasting.

 

Vanilla Whipped Cream

1 - While your key lime pie is chilling, pour the heavy cream, vanilla paste, and powdered sugar into a mixing bowl. Then, whip using your stand mixer or hand mixer with the whisk attachment until nice and fluffy.

2 - Zest one lime and, for decoration purposes, slice it like so.

3 - Place the whipped cream in a piping bag with a tip, and pipe the whipped cream on the key lime pie.

4 - Finally, decorate with the lime slices, and chill just for 15 minutes to allow the whipped cream to set. Then, sprinkle some fresh lime zest on top of the key lime pie before plating.

5 - Enjoy!
