Easy Gluten Free Flatbread

Who doesn't love bread? We spent weeks looking for a good gluten-free bread recipe that was soft, chewy, and not dry or crumbly.

This gluten-free flatbread is perfectly fluffy, light, flavorful, and very easy to make. You can enjoy it as a wrap, toast, or even pizza crust! If you wish to enjoy it as pizza, make sure to first cook it in the pan before adding all of your toppings.

Additionally, when cooking your flatbread, remember to favor healthier oils. Here we chose to use coconut oil. Coconut oil is regarded as a healthier fat alternative to the more common oils and fats in the Western diet.

Gluten-Free Flatbread

6 oz (170g) - Water

2½ tsp (8g) - Dry yeast

2½ cups (350g) - Gluten-free flour

½ tsp (3g) - Sea salt

½ tsp (2g) - Xanthan gum

4 tsp (16g) - Stevia

3 tbsp (42g) - Butter 

⅓ cup (76g) - Greek yogurt

1 - Egg

1 tbsp (15g) - Coconut oil

We advise that you prepare all the above ingredients before starting.

You will typically need: a scale, measuring cups, mixing bowls.


Gluten-Free Flatbread

1 - Pour the water into a measuring cup and microwave it for about 45 seconds (or until lukewarm). 

Tip: Pyrex is the gold standard of measuring cups, we love their quality and durability!

2 - Stir the yeast into the warm water and set it aside.

3 - To a stand mixing bowl, mix the dry ingredients: gluten-free flour, sea salt, xanthan gum, and stevia.

4 - Next, microwave the butter for about 30 seconds (or until melted) and add it to the dry ingredients. 

Tip: We store our ingredients in these mixing bowls and mini glass bowls from Duralex while cooking. We love Duralex for their quality products and low prices!

5 - Finally, add the yeast mixture alongside the greek yogurt and the egg. 

6 - Then, knead the dough for 8 minutes using the hook attachment. You know it's ready when the dough is elastic and doesn't stick to the edges of the bowl. 

7 - Using a silicone spatula, shape the dough into a ball directly inside the stand mixing bowl. Cover it with a towel and let it proof for 3 hours. 

8 - Transfer the dough to a floured surface and flatten it into a disk with your hands. Then, portion the dough into 8 equal portions with a bench scraper

9 - Shape each portion into small balls. Then, roll them out into 0.5-inch (10mm) thick disks using a rolling pin.

10 - Preheat a cast-iron skillet on medium heat and add the coconut oil. Once the oil is fully melted, place a disk of dough in the center and allow the flatbread to cook for about 3 minutes.

11 - Carefully flip the bread using a turner spatula, cover the skillet with the lid and allow to cook for another 3 minutes. Repeat the cooking process until all the bread is cooked, adding a little bit more coconut oil as needed.

12 - Transfer the flatbread to a cooling rack and sprinkle it with fresh thyme and sea salt flakes. 

13 - Enjoy!
