Have you ever wondered what to do with leftover bread? Well, there is nothing more classic than using it to make french toast for breakfast. Children or adults, everyone loves it!

What we love most about this breakfast recipe is that french toast can be flavored in so many ways, almost like pancakes! You can drizzle maple syrup, or chocolate sauce, add a knob of butter, or even fresh fruits. The possible combinations are endless!

For this recipe, we chose to make our french toast with a tasty and fluffy brioche, flavor the batter with cinnamon, and finally, drizzle maple syrup on top. The perfect comfort food combo!

French Toast

1 - Egg

2 - Egg yolks

2.1 oz (60g) - Xylitol

10.5 oz (300ml) - Milk 

1 tsp (2g) - Cinnamon

2 tsp (8ml) - Vanilla extract

We advise that you prepare all the above ingredients before starting.

You will typically need: a scale, measuring cups, mixing bowls.


French Toast

1 - Add 2 egg yolks and one whole egg to a large mixing bowl.

Tip: We store our ingredients in these mixing bowls and mini glass bowls from Duralex while cooking. We love Duralex for their quality products and low prices!

2 - Add in the xylitol and whisk the eggs until well combined.

3 - To a saucepan (or like us a saucier pan), add the milk, cinnamon, and vanilla extract. Using a silicone spatula, stir everything together and place it over high heat. Bring the milk to a boil before removing it and allow it to cool down slightly. 

4 - Pour the slightly cool milk into the egg and sugar mix. Whisk everything together until combined before transferring it back to the saucepan.

5 - Cook it on medium-low heat for 4 minutes while continuously stirring with a silicone spatula. Then, transfer it to a shallow glass container

6 - Slice the brioche into thick slices using a bread knife and place them one by one into the milk mixture. Allow each slice to soak on both sides for 5 minutes each before transferring them to a cooling rack

Tip: Sabatier knives are excellent French blades we recommend for professional and home cooks.

7 - Add butter to a cast-iron skillet and allow it to gently melt over medium heat. Once it has melted, add one slice of the soaked bread. Allow it to cook on medium-high for 4 minutes before flipping it and allowing it to cook for another 4 minutes. Repeat this process with each slice. 

8 - Once all the slices are cooked, stack them on a plate and serve them with the syrup of your choice. This 100% Pure Vermont Maple Syrup is our favorite!
