Chocolate Mousse & Streusel Topping

In this recipe, we are showing you step-by-step how to make tasty chocolate mousse with a delicious streusel topping.

This delicious chocolate mousse only requires 2 ingredients and is one of our favorite recipes.

We served it with a tasty and crunchy chocolate streusel topping which made this recipe even more chocolaty!

Chocolate Mousse

7 oz (200g) - Dark chocolate

6 - Eggs

1 pinch (2g) - Sea salt

 

Chocolate Streusel

⅓ cup (35g) - Almond flour

¼ cup (35g) - Flour

4 tbsp (35g) - Light brown sugar

1½ oz (35g) - Butter

1½ tbsp (9g) - Cocoa powder

1 pinch (2g) - Sea salt

We advise that you prepare all the above ingredients before starting.

You will typically need: a scale, measuring cups, and mixing bowls.

 

Chocolate Mousse

1 - Separate the egg yolks from the egg whites. 

2 - In a large mixing bowl, break your dark chocolate and microwave it 2 times 30 seconds until the chocolate is completely melted, and set it aside. 

3 - While your chocolate is cooling down, start whipping the egg whites with a pinch of sea salt until peaks form and hold. You can use an electric hand mixer or a stand mixer. The KitchenAid Artisan Design Series and the KitchenAid Professional 600 Series are superstars among stand mixers and will look amazing in your kitchen!

4 - Pour the melted chocolate into the 6 egg yolks with the help of a spatula, and combine them using a whisk. Then, slowly add the egg whites to the mixture using a spoon. You want to incorporate the egg white as gently as possible to keep the meringue fluffy and airy. 

5 - Separate the chocolate mousse into 3 mugs, cover and chill them for 1 hour (or until set). We love the elegant designs of these 3 different styles of mugs: crystal, copper, and assorted colors.


Chocolate Streusel

1 - Combine almond flour, all-purpose flour, light brown sugar, cocoa powder, and sea salt together and stir using a spoon (or like us directly in your food processor). 

2 - Then, add the cold butter to your dry ingredients and mix until crumbly. You can use an electric hand mixer or a food processor. Here, we are using the excellent Breville Sous Chef food processor.

3 - Spread the streusel on a sheet pan covered with parchment paper (or a Silpat) and break down your streusel using a knife. Sabatier knives are excellent French blades we recommend for professional and home cooks.

4 - Bake at 340°F (170°C) for 15 minutes. 

5 - When ready and still warm, add another pinch of sea salt and break it down again to mix your chocolate streusel with the salt.

6 - Enjoy!
