We advise that you prepare all the above ingredients before starting.

One-Pot Pasta

1 - Peel the carrot and the onion, then slice them using a sharp knife.

Tip: We love Japanese knives and recommend this quality kit from GLOBAL for home and professional chefs. We also love this reversible cutting board with integrated hand grips from John Boos.

2 - Coarsely chop the spinach and the fresh parsley. Then, finely chop the garlic clove and set everything aside.

3 - Place a skillet over medium heat and drizzle about 2 tablespoons of olive oil. Add the carrot slices and let it sauté for about 3 minutes. We love this professional set of stainless steel measuring cups and spoons.

4 - Next, add the onion. Stir lightly using a spoon (or a spatula) and cook for 10 minutes. Mix once in a while to prevent your vegetables from sticking to the pan.

5 - Add the chopped garlic clove and the vegan meat. Gently stir before adding your raw whole-wheat spaghetti. Pour 3 cups of water over the pasta and slowly cook on medium-low heat for 20 minutes. After 20 minutes, you will obtain al dente pasta. If you prefer softer pasta, cook for another 6 to 10 minutes.

6 - Add the salt and the cumin seeds. Stir a little and let it cook for another 5 minutes.

7 - Add the cheddar and mix gently before cooking one last time for 5 minutes.

8 - Remove your skillet from the heat and stir in the baby spinach and the parsley. Then, once plated and before tasting, sprinkle some pumpkin seeds for extra flavors.

9 - Enjoy!
