This gluten-free pumpkin mac and cheese recipe is ultra creamy and delightfully autumnal! Perfectly al dente pasta is cooked in deliciously seasoned milk and toasted in a simple pumpkin cheese sauce. Made with only simple ingredients in less than 30 minutes, this cozy mac and cheese recipe is the perfect meal for the holiday season and might quickly become your favorite fall meal!

Pumpkin Mac & Cheese

4 cups (1kg) - Milk

¼ tsp (0.7g) - White pepper

¼ tsp (0.7g) - Smoked paprika

1 tsp (5.5g) - Sage

12 oz (340g) - Gluten free pasta

15 oz (425g) - Pumpkin puree

1 tsp (5.5g) - Salt

5 oz (141g) - Cream cheese

7 oz (200g) - Cheddar

To taste - Parsley

We advise that you prepare all the above ingredients before starting.

You will typically need: a scale, measuring cups, mixing bowls.

 

Pumpkin Mac & Cheese

1 - To a large Dutch oven, add the milk, white pepper, smoked paprika, and sage powder. Whisk together and bring to a simmer over low heat.

2 - Add the gluten-free pasta to the pot and cook on medium heat for 6 minutes, stirring from time to time using a silicone spoon. Then, put the lid onto the dutch oven and cook for another 8 minutes. 

3 - After 8 minutes, give the pasta a quick mix and stir in the pumpkin puree until fully combined.

4 - Season with salt before stirring in the cream cheese.

5 - Once the cream cheese is fully incorporated, add the grated cheddar to the pasta and mix to allow the cheese to fully melt. 

6 - Finely slice the scallions and roughly chop the fresh parsley on a cutting board using a sharp knife.

7 - Transfer the pumpkin macaroni to a serving bowl and decorate with the chopped scallion, parsley, and fresh sage leaves.
