This creamy mushroom chicken is a crowd-pleasing single-pan chicken dish. Every bite is so juicy and tender! 

It is made with juicy chicken breast and a creamy mushroom sauce seasoned with turmeric and oregano. A real delight for your tastebuds.

This recipe is incredibly easy to make and can be served with numerous different side dishes: mashed or baked potatoes, pasta, fries, or rice.

Creamy Mushroom Chicken

Olive oil

4 - Chicken breast

½ - Onion

10.5 oz (300g) - Mushroom

3 - Garlic cloves

1 tbsp (2g) - Oregano

½ tsp (1.5g) - Turmeric

2 cups (450ml) - Chicken stock

2 tbsp (21g) - Corn starch

2 tbsp (30ml) - Water 

To taste - Salt

To taste - Pepper 

4 oz (113g) - Cream cheese

We advise that you prepare all the above ingredients before starting.

You will typically need: a scale, measuring cups, mixing bowls.


Creamy Mushroom Chicken

1 - Crush and peel the garlic cloves before finely mincing them. Transfer them to a small bowl and set them aside. 

Tip: We recommend you use a Santoku knife for this task. We love Japanese knives and recommend this quality kit from GLOBAL for home and professional chefs. We also love this reversible cutting board with integrated hand grips from John Boos.

2 - Cut the onion in half. Cut one half into quarters and store the other one in the fridge for another recipe. Then, peel the skin off and mince it before setting it aside.

Tip: We store our ingredients in these mixing bowls and mini glass bowls from Duralex while cooking. We love Duralex for their quality products and low prices!

3 - Next, cut all mushrooms in half and finely slice them. Transfer them into a bowl and set them aside. 

4 - Place a cast-iron dutch oven over medium heat and add about 3 tbsp of olive oil.

5 - Once the oil is hot and starts to bubble, add the 4 chicken breasts. Then, sprinkle some sea salt flakes on top and allow the chicken to cook for about 5 minutes. 

6 - Flip the chicken using cooking tongs and cook for another 5 minutes. Then, retrieve the chicken from the dutch oven and set it aside.

7 - Without changing the oil, add the minced onion to the same pot. Give it a quick stir with a spatula to coat it in oil and allow it to cook on medium heat for about 5 minutes.

8 - Add the sliced mushrooms, oregano, turmeric, salt, and pepper to the onion. Stir to combine and allow to cook on medium heat for another 5 minutes. 

9 - Stir in the mixed garlic and pour in the chicken stock using a pouring jug. Mix the water and corn starch together and add it to the mushroom sauce. Stir one more time to combine before returning the chicken to the pot.

10 - Make sure to submerge the chicken into the sauce and bring it to a simmer. From there, cover it all with the lid and simmer for about 40 minutes.

Tip: The cooking time will depend on how thick the chicken breasts are. If they are thinner, check the chicken after 20 minutes. 

11 - When the chicken breasts are fully cooked, retrieve them from the pot and get them ready to serve. 

12 - Finally, add the cream cheese and mix until everything is well combined.

13 - Serve the chicken to a plate with some of the delicious mushroom sauce and some pasta or fresh salad.
