Coconut Peanut Butter Energy Balls

1 cup (138g) - Dates

¾ cup (110g) - Cashews

½ cup (75g) - Coconut chips

3 tbsp (30g) - Chia seeds

1 pinch - Sea salt flakes

⅓ cup (95g) - Peanut butter

- - - - - - - - - - - - - - - - - - - - - - - - - - - 

We advise that you prepare all the above ingredients before starting.

You will typically need: a scale, measuring cups, mixing bowls.

 

Coconut Peanut Butter Energy Balls

1 - Combine the dates, cashews, coconut chips, and chia seeds in a food processor and blend them until finely ground.

Tip: Here, we are using the excellent Breville Sous Chef food processor.

2 - Add the sea salt flakes and the peanut butter. Blend again until a dough forms.

3 - Finally, portion the energy balls using a small ice cream scoop and place the dough in your hand.

4 - Place the energy balls on a plate and transfer them into the fridge for about 15 minutes.

5 - Enjoy!
