Whether you are looking for new creative ways to cook summer tomatoes or simply want a quick and easy side dish, these stuffed tomatoes are filled with ground beef, French comté cheese, and are absolutely delicious!

There is something comforting about melty cheese and aromatic herbs, and this dish has it all! This is also one of those dishes that we want to eat all the time when tomatoes are in season. They are packed with the fresh summer flavors of tomatoes and herbs. Plus, like hidden treasures, there are chunks of melty fresh comté cheese in there.

Cheesy Stuffed Tomatoes

9 to 12 - Tomatoes

14 oz (400g) - Ground beef

1 - Egg

3 cloves - Garlic

1 tbsp (3.5g) - Rosemary

To taste - Sea salt

To taste - White pepper

4 oz (113g) - Comté (grated)

2 oz (56g) - Comté (diced)

1 cup (243g) - Tomato juice (homemade)

We advise that you prepare all the above ingredients before starting.

You will typically need: a scale, measuring cups, mixing bowls.


Cheesy Stuffed Tomatoes

1 - Preheat your oven to 360°F (180°C).

2 - Cut the top of the tomatoes using a sharp knife. Then, scoop out the seeds using a spoon.

3 - Transfer the seeds into a bowl and blend them using a hand blender.

4 - To a large mixing bowl, combine the ground beef with the egg and stir with a silicone spatula until well combined.

5 - Crush and peel the garlic cloves with the blade of a knife. Then, finely mince the garlic and add it to the meat.

6 - Next, add the rosemary, salt, and pepper to the meat and stir everything until well combined. 

7 - Grate the comté using a zester and mix it into the stuffing mixture until well combined. 

8 - Pour 1 cup (243g) of the tomato juice and stir until homogeneous. 

9 - Stuff the tomatoes with the meat mixture and place them into a baking dish or baking tray

10 - Dice the comté and push 1 cube of cheese inside the meat of each stuffed tomato. 

11 - Place the tops of the tomatoes back on top of each one and bake for about 35 minutes at 360°F (180°C). Once baked, use cooking tongs to help you serve.
