Blueberry Pancakes With Fresh Blueberry Syrup

Our team loves pancakes! We certainly know we are not alone! Who doesn’t love homemade pancakes?

They are fluffy, tasty, rich, and easy to make! And of course, if plain pancakes are good, we all know blueberry pancakes are even better.

Most of the time we top just about anything with butter and maple syrup to be sure we will get something delicious.

However, if you want an amazing homemade blueberry pancake recipe, look no further!

In this video, Chef Ludivine made a perfectly thick homemade blueberry syrup to add to these delicious blueberry pancakes. Because we all know, there are never enough blueberries!

Blueberry Syrup

6¼ oz (178g) - Blueberries

¼ cup (55g) - Sugar

⅓ cup (80ml) - Water

1 tbsp (10ml) - Lemon juice


Blueberry Pancakes

1½ cups (200g) - Flour

2 tsp (8g) - Baking powder

½ tsp (3g) - Himalayan salt

2 - Eggs

2 tbsp (20g) - Coconut sugar (or light brown sugar)

1 cup (230g) - Coconut milk (or buttermilk)

2 oz (57g) - Melted butter

¾ cup (105g) - Blueberries

We advise that you prepare all the above ingredients before starting.

You will typically need: a scale, measuring cups, mixing bowls.

 

Blueberry Syrup

1 - First, make a syrup by putting the sugar and the water in a saucepan (or like us a saucier pan) and bring it to a boil.

2 - Once the sugar is fully dissolved, add the fresh blueberries and the lemon juice into the syrup and cook for about 10 minutes.

3 - Mix everything together using a blender, strain, and set aside. Vitamix blenders are by far the best we have ever owned: Vitamix Explorian, Vitamix Pro Series 750.


Blueberry Pancakes

1 - Combine the flour, salt, and baking powder in a large mixing bowl. Briefly stir using a whisk.

2 - In a separate bowl, crack the eggs and whisk vigorously until homogeneous.

3 - Next, add the eggs, coconut sugar, coconut milk and melted butter. Mix until well combined.

4 - Pour the liquid ingredients over the flour mix and combine everything together using a whisk. Once the batter is ready, you can choose to cook the pancakes right away or to let the preparation rest for 1 hour before cooking to allow flavors to develop.

5 - Put a skillet over medium-low heat. Meanwhile, add the fresh blueberries to the pancake batter.

6 - When the skillet is hot, spread a piece of butter in it. Then, put a generous amount of your pancake batter in the center and let the pancake cook for about 3 minutes on both sides. Repeat until all the pancakes are cooked. You should be able to get about 6 large pancakes depending on their size.

7 - Stack your pancakes and pour the homemade blueberry syrup over them before tasting.

8 - Enjoy!
