We all know and love Rosanna Pansino! She has been sharing delicious recipes for years on Youtube! Today, we are giving her a try and will be testing our first Rosanna Pansino recipe: banana bread!

For extra flavor, we have added some delicious dark chocolate chunks and a little bit of baking powder for texture.

What we like about this recipe: it is very easy to make, the banana bread is very moist, it is full of banana flavor and so delicious! Check out Rosanna’s original video.

Banana Bread

2 cups (280g) - Flour

1 tsp (5g) - Baking soda

1 tsp (5g) - Baking powder

1 pinch - Sea salt

8 tbsp (113g) - Butter

¾ cup (170g) - Sugar

2 - Eggs 

1 tsp (5g) - Milk

1 tsp (5g) - Vanilla extract

4 - Bananas

⅔ cup (75g) - Pecans

¾ cup (150g) - Dark chocolate

We advise that you prepare all the above ingredients before starting.

You will typically need: a scale, measuring cups, mixing bowls.


Banana Bread

1 - Preheat your oven at 350°F (175°C).

2 - Into a large mixing bowl, whisk all the dry ingredients together: flour, sea salt, baking soda, and baking powder. Set aside.

Tip: We store our ingredients in these mixing bowls and mini glass bowls from Duralex while cooking. We love Duralex for their quality products and low prices!

3 - Into another mixing bowl, whisk the room temperature butter with the sugar until creamy.

Tip: You may also use a hand mixer. We recommend this 7-speed hand mixer from KitchenAid for its quality and elegant design.

4 - Next, crack the eggs into the butter and whisk vigorously until well combined. 

5 - Finally, whisk the vanilla extract and the milk into the butter mixture and set it aside. 

6 - Peel the 3 ripest bananas, add them to a clean bowl and mash them using a potato masher

7 - Add half of the flour mixture into the butter mix and stir until well combined using a silicone spatula

8 - Next, pour half of the mashed bananas into the batter and stir until well combined.

9 - Finally mix in the remaining flour mixture and the mashed bananas to the cake batter one at a time. 

10 - Roughly chop the pecans and dark chocolate, and mix them into the batter until well combined.

11 - Coat a loaf pan with baking spray and transfer your batter in it.

12 - Slice the last banana in half lengthwise using a sharp paring knife and place it on top of the bread open side up. Then, transfer the banana bread into the oven and allow baking for about 75 minutes at 350°F (175°C).

13 - When ready, let cool completely at room temperature over a cooling rack. Then, gently unmold the bread.

Tip: We recommend using an offset spatula to help you unstick the bread from the loaf pan.
