Bacon & Cheddar Quiche From Scratch

In this new video, learn how to make a delicious bacon & cheddar quiche with its homemade quiche dough!

Quiches are among the simplest recipes and are infinitely customizable.

This dough recipe will give your quiches a nice crunch and a delicious buttery flavor. As for the filling, it is mainly composed of cheddar and bacon, the most common duo for quiches. Another combo that we also recommend you try is goat cheese and spinach. But honestly, don't be afraid to get creative and try mixing your favorite ingredients when making your own quiches.

Quiche Dough

2 - Egg yolks

1.7 oz (50ml) - Water

8.8 oz (250g) - Flour

1 tsp (6g) - Himalayan salt

4½ oz (125g) - Butter

 

Filling

8.8 oz (250ml) - Milk

9.8 oz (280g) - Heavy cream

8.1 oz (230g) - Cheddar

6 slices - Bacon

6 - Eggs

1 tsp (6g) - Himalayan salt

We advise that you prepare all the above ingredients before starting.

You will typically need: a scale, measuring cups, mixing bowls.


Quiche Dough

1 - Separate the egg yolks from the whites and put them into a small bowl. Place the whites into a small food container and keep them refrigerated for another recipe.

2 - To a stand mixer bowl, add the egg yolks, water, flour, Himalayan salt, and cold butter.

3 - Knead these ingredients together at medium speed for 10 minutes with the hook attachment.

4 - Wrap the dough in a sheet of food wrap and slightly roll it out to flatten it. Keep it refrigerated until needed.

 

Filling & Preparing The Dough

1 - Preheat a cast-iron skillet on medium heat and place 3 bacon slices at a time in it. Then, bake them for 2 minutes on each side. Once cooked, remove them from the pan using kitchen tongs and let them cool.

2 - Preheat your oven to 350°F (175°C).

3 - Flour your work surface as well as your quiche dough. Roll out the dough to 0.2 inch (5 mm) thickness using a rolling pin (marble/wood). Next, place an upside-down pie dish over your dough and cut it with a paring knife, leaving an extra 1.5 inches (3.8 cm) all the way around like so.

4 - Remove the excess dough and roll the remaining dough around the rolling pin.

Tip: This is the best way to prevent the dough from breaking and cracking while transferring it to the pie dish. 

5 - Gently unroll the dough over the pie dish and slowly press it down with your fingers against the bottom and along the edges of the pie dish. Then, create a fluted edge. Finally, dig small holes in the crust with a spike roller wheel and bake it at 350°F (175°C) for about 35 minutes.

6 - Crack and beat the eggs in a large mixing bowl. Add the heavy cream, milk, and Himalayan salt to them. Whisk until well combined and set aside.

7 - Stack and roughly mince the bacon slices using a sharp knife.

8 - Add a generous layer of bacon to the quiche crust. Then, add the minced bacon and another layer of cheddar.

9 - Pour le liquid mixture into the quiche crust using a jug before baking it in a 350°F (175°C) oven for about 50 minutes.

10 - Once ready, let the quiche cool down in its dish at room temperature for about 15 minutes before attempting to cut it.
