We also have another recipe for traditional extra-crispy onion rings available here.

Avocado Cheddar Onion Rings

- Cut the avocados in half, remove their flesh using a spoon, and place it into a large mixing bowl.

- Mash the avocados until nice and smooth using a fork.

- Next, press the lime with the palm of your hand on a cutting board. Then, cut the lime in half and squeeze the juice into the mashed avocados. Pressing a lime or lemon will make the flesh softer and will make it easier for you to extract its juice.

- Add the oregano and salt to the mashed avocados, then mix until well combined.

- Peel and slice the onion in large rings and place the onion on a baking tray. Cover it with parchment paper or a silicone mat and fill the center of the onion with the avocado stuffing halfway. Next, place a piece of cheddar and cover it with the avocado mix until you reach the top of the onion ring. We are showing you how to cut and stuff onion rings here

- Freeze the stuffed onion rings for at least 30 minutes and up to 1 hour.

- Crack the eggs in a mixing bowl and mix using a fork until homogeneous.

- Dip the frozen onion rings in the flour first, then in the eggs, then in the bread crumbs, a second time in the eggs, and finally one last time in the bread crumbs.

- Pour a good amount of the vegetable oil of your choice in a skillet, place the gourmet onion rings in it, and cook for about 3 minutes on each side over medium heat. When cooked, place the onion rings on a cooling rack to drain the excess oil.

- Plate the gourmet onion rings and sprinkle with fresh parsley before tasting.

- Enjoy!
