We advise that you prepare all the above ingredients before starting.

You will typically need: a scale, measuring cups, mixing bowls.

Onion Rings

1 - For the batter, combine all the dry ingredients in a large mixing bowl: the flour, cornstarch, smoked paprika, oregano, and salt. Mix briefly with a whisk (or a fork), and stir the cold water in with a measuring cup. Whisk until homogeneous and set aside at room temperature.

Tip: We store our spices and small quantities in these mini glass bowls from Duralex while cooking.

2 - Peel a large onion, cut thin slices, and separate each ring. We recommend you use a Santoku knife for this task. Sabatier knives are excellent French blades we recommend for professional and home cooks. We also love this reversible cutting board with integrated hand grips from John Boos.

Tip: Here we used yellow onions, however, you can use any onion variety you like for this recipe.

3 - Dip the rings into the batter and coat them with the bread crumbs. Then, place them on a baking tray with a silicone mat. We are showing you how here

Tip: At this stage, you can choose to freeze them or cook them directly.

4 - Deep fry the onion rings in a saucepan (or like us a saucier pan) for about 3 minutes in vegetable oil at 350°F (175°C). All-Clad is the gold standard for professional quality stainless steel cookware.

Tip: We recommend using tongs and a good thermometer for control and accuracy.

5 - When ready, place them on a cooling rack (with a baking tray underneath) for about 2 minutes before plating. You will notice that the onion rings will feel and look very soft but no worries, they will firm up and the crumbs will become extra crispy when cooling.

6 - Plate the onion rings and sprinkle some freshly cut cilantro on top.

7 - Enjoy!
