Tofu Nuggets That Taste Like Chicken

When we hear tofu meat, we immediately think of this white flavorless block of tofu. Not really appetizing... But in reality, tofu is very versatile, and can be used in so many recipes and in so many ways! No need to be a professional cook to turn tofu into something delicious! Here, we are showing you how easy it is to make tofu nuggets that taste and look like chicken.
Of course, we all know this technique where we press the tofu to remove as much water as possible. The thing is, even if we press it down, we miss the most important detail when it comes to making tofu nuggets that taste like chicken: the texture. This is why we are freezing the block of tofu overnight. The remaining water inside will expand and will allow us to extract even more water from it the next day. And the result is very impressive!
Now, season the cornstarch with your favorite spice mix and bake your delicious tofu nuggets until nice and crispy. The texture is incredible and looks like chicken meat. We can't wait for you to try it!

Tofu Nuggets
1 block - Firm tofu
¼ cup (40g) - Corn starch
¼ tsp (0.5g) - Curry powder
To taste - Sea salt
To taste - White pepper
½ tsp (1g) - Smoked paprika

We advise that you prepare all the above ingredients before starting.
You will typically need: a scale, measuring cups, mixing bowls.
Tofu Nuggets
1 - On a plate, place the block of tofu between 2 sheets of folded paper towel. Then, place a pan (or a tray) on top and press it with enough weight for at least 35 minutes to remove as much water as possible.
2 - Next, wrap the tofu in a sheet of parchment paper and transfer it to the freezer overnight.
The next day...
3 - Into a large mixing bowl, whisk the corn starch and all the spices together. Set the mix aside.
4 - Remove the tofu from the freezer and leave it at room temperature until fully defrosted.
5 - Place it back onto a plate between 2 sheets of folded paper towel. Press the tofu for another 35 minutes with a pan (or a tray) with enough weight.
6 - Break the block of tofu by hand into bite-size nuggets.
7 - Using a spatula, mix the tofu nuggets into the corn starch mixture and transfer them to a baking tray lined with parchment paper (or a silicone mat).
8 - Drizzle about 2 tbsp of olive oil on top of the tofu and mix until each nugget is well coated with oil.
9 - Spread the nuggets throughout the tray to leave room between each of them and bake for about 35 minutes into a 375°F (190°C) preheated oven.
