Prep time: 20 mins / Cook time: 1 hr 10 mins / Servings: 3 potatoes

3 - Sweet potatoes

1 tsp (5g) - Himalayan salt

1 cup (100g) - Parmesan

½ cup (115g) - Cream cheese

1 cup (170g) - Cooked cauliflower

To taste - Cheddar

To taste - Scallion

We advise that you prepare all the above ingredients before starting.

You will typically need: a scale, measuring cups, and mixing bowls.


1 - Preheat your oven to 375°F (190°C).

2 - Place 3 potatoes on a baking tray. Pour some olive oil and a pinch of salt on top and rub them with your hands. These glass dispenser bottles are great for olive oil, vinegar, or even salad dressings. 

3 - Bake at 375°F (190°C) for 50 minutes.

4 - Cut each potato open following an ellipse shape on top, and extract the hot orange flesh using a spoon.

5 - Place the flesh in a mixing bowl and mash it with a fork.

6 - Add the salt, parmesan, and cream cheese. Then, mix generously with the fork.

7 - Incorporate the cauliflower and mix some more, until a uniform light orange mixture appears.  

8 - Fill the potato shells with the mixture and add some cheddar on top. 

9 - Bake at 375°F (190°C) for another 20 minutes.

10 - Decorate the baked potato with scallions. 

11 - Enjoy!
