We advise that you prepare all the above ingredients before starting.
You will typically need: a scale, measuring cups, mixing bowls.
Spicy Broccoli Soup
1 - Using a speed peeler, peel the potatoes before chopping them into large chunks.
Tip: We recommend you use a Santoku knife for this task. We love Japanese knives and recommend this quality kit from GLOBAL for home and professional chefs. We also love this reversible cutting board with integrated hand grips from John Boos.
2 - Transfer to a large saucepan (or like us a saucier pan) and fill with water to cover the potatoes. Place on high heat and bring the water to a boil. Stir from time to time using a spoon (wooden/silicone).
Tip: Allow the potatoes to boil until they are soft and fully cooked.
3 - Drain the potatoes from the water and set them aside.
4 - Take the broccoli head. Cut off the florets and cut the stalk into chunks.
Tip: We recommend you use a chef's knife for this task.
5 - To a clean large saucepan, add the broccoli and fill with water.
Tip: We recommend a high-quality glass bottle over plastic to hold your liquids while cooking.
6 - Cut the onion into large chunks and add to the broccoli.
7 - Place the pan over high heat and boil until the broccoli is tender.
8 - Once cooked, drain and set aside the broccoli and onion.
9 - To a high-speed blender, add the boiled potatoes, broccoli, and onions, along with the rest of the soup ingredients. Making sure the lid is securely on, blend the soup until smooth.
Tip: Vitamix blenders are by far the best we have ever owned: Vitamix Explorian, Vitamix Professional Series 750, and the new generation Vitamix A3500.
Broccoli Soup Garnish
1 - To serve the soup, pour portions into individual soup bowls.
2 - Garnish each bowl by drizzling over some heavy cream and sprinkling over some sesame seeds, sunflower seeds, a pinch of cayenne pepper, and a few leaves of fresh parsley.
Tip: We store our ingredients in these mixing bowls and mini glass bowls from Duralex while cooking. We love Duralex for their quality products and low prices!
3 - Enjoy!
