Pumpkin Spice Pancakes & Homemade Pumpkin Spice Syrup

In this new episode, we are showing you how to make perfect fluffy pumpkin pancakes with tasty homemade pumpkin spice syrup.
These pumpkin spice pancakes are the perfect sweet and delicious fall breakfast! This incredible breakfast is made without an ounce of refined sugar. Instead, we used xylitol, which occurs naturally in many fruits and vegetables. Xylitol is also known to inhibit the growth of oral bacteria in plaque and saliva which makes it just perfect for our pastries and breakfasts.
Also made with buttermilk, pumpkin puree, and topped with its delicious homemade pumpkin syrup, you are not going to be able to resist this pumpkin spice breakfast treat!

Pumpkin Spice Syrup
1 cup (240g) - Pumpkin puree
1 cup (240ml) - Water
¾ cup (175g) - Xylitol
1½ tsp (3g) - Pumpkin spice
Pumpkin Spice Pancakes
1½ cups (220g) - Flour
1 tsp (6g) - Baking soda
½ tsp (1g) - Cinnamon
1½ tsp (3g) - Pumpkin spice
3 tsp (12g) - Baking powder
1 cup (240g) - Pumpkin puree
¼ cup (55g) - Xylitol
2 - Eggs
1 cup (250ml) - Buttermilk

We advise that you prepare all the above ingredients before starting.
You will typically need: a scale, measuring cups, mixing bowls.
Pumpkin Spice Syrup
1 - Start by making the pumpkin syrup. To a saucepan (or like us a saucier pan), add the pumpkin puree, water, xylitol, and pumpkin spice and give it a gentle mix with a spatula to combine all the ingredients together.

2 - Place the saucepan on high heat and bring to a boil. Allow to boil for about 1 minute to allow the syrup to thicken slightly.
3 - After boiling, pour the syrup through a metal sieve into a large bowl to remove bits and to ensure the syrup is completely smooth and silky.

4 - Let the syrup cool at room temperature while you make the pancakes.
Pumpkin Spice Pancakes
1 - To a large bowl, add the flour, baking soda, cinnamon, pumpkin spice, and baking powder. Using a whisk, lightly combine together and set aside.
2 - In a separate large bowl, whisk together the pumpkin puree and xylitol before cracking in the eggs. Whisk to fully combine the ingredients together.
3 - Finally, pour the buttermilk into the egg mix and whisk to combine. The batter should be smooth and homogeneous.
4 - Add the dry ingredient mix to the wet ingredients. Using a spatula, gently mix everything together. Make sure not to over mix but ensure there are no large lumps of flour either.
5 - Let the batter rest for at least 30 minutes before making the pancakes.
6 - To cook the pancakes, add butter to a large cast-iron skillet and place over high heat. Allow the butter to melt before spreading it around the skillet with a paper towel.

7 - Turn the heat down to medium-low and pour about ½ cup of batter into the middle of the skillet using a measuring cup.
Tip: Because the batter is very thick, it won’t spread that much. You can allow it to naturally spread, or if you want uniformed pancakes, use a spatula to lightly spread it into a circle (but still keeping it quite thick).
8 - Cook the pancake for about 4 minutes, allowing the batter to rise slightly and bubbles to form on the surface. Then gently flip the pancake with a turner spatula and allow it to cook for another 4 minutes on the other side. Remove the pancake from the pan and keep it warm under a tea towel while you make the rest.
9 - Repeat steps 7 & 8 until you have used up all the batter.
10 - To serve, stack 3 or 4 pancakes on top of each other. Add a slice of butter to the top of the stack and drizzle over some of the pumpkin spice syrup.
