These matcha chocolate chip cookies are soft, chewy, full of matcha flavor, and, most importantly, sugar-free!

Matcha Chocolate Chip Cookies
2 cups (320g) - Flour
3 tbsp (21g) - Matcha powder
1 tsp (6g) - Himalayan salt
1½ tsp (6g) - Baking powder
¾ cup (150g) - Dark chocolate
¾ cup (170g) - Butter
½ cup (75g) - Coconut sugar
½ cup (100g) - Xylitol
1 - Egg yolk
1 - Egg

We advise that you prepare all the above ingredients before starting.
You will typically need: a scale, measuring cups, mixing bowls.
Matcha Chocolate Chip Cookies
1 - Preheat your oven to 365°F (180°C).
2 - In a mixing bowl, combine the flour, matcha powder, baking powder, and Himalayan salt. Then, mix xith a whisk until well combined and set aside.

3 - Roughly chop the dark chocolate and set it aside.

4 - To a stand mixer bowl, add the coconut sugar, xylitol, and melted butter. Then, using the paddle attachment, mix on medium speed until well combined.

5 - Add the egg and the egg yolk and mix until well incorporated.
6 - Slowly add the flour mixture into the stand mixer bowl and mix at low speed until just combined.
7 - Lastly, add the chopped chocolate to the cookie dough and mix until fully combined.
8 - Portion the cookies using an ice cream scoop. Then, shape each dough ball into a thick flat disk.
9 - Place the cookies on a baking tray lined with parchment paper (or a silicone mat) making sure to leave a little bit of space between each cookie. Then, bake at 365°F (180°C) for about 12 minutes.
10 - Once baked, remove the cookies from the oven and transfer them to a cooling rack using an offset spatula and let them rest for about 5 minutes.
