Incredible Italian Pesto

Born and raised in the south of France, chef Ludivine grew up in a Provençal and Italian culture.
So today, we are very happy to share with you this recipe that has been in our family for generations.
This recipe is all about simplicity and high-quality ingredients, which will give you the best Italian pesto!
You can enjoy this Italian pesto with pasta, rice or even mix it in a vinaigrette.

Italian Pesto
1 oz (35g) - Basil
1 - Garlic clove
4 oz (113ml) - Olive oil
1 pinch - Sea salt
¼ cup (40g) - Pine nuts
3 oz (85g) - Parmesan

We advise that you prepare all the above ingredients before starting.
You will typically need: a scale, measuring cups, mixing bowls.
Italian Pesto
1 - Crush the garlic clove on a cutting board using a large knife. This technique will help you peel the garlic clove easily.

2 - Stack the basil leaves, roll them like sushi, and chop them with your knife.
3 - Finely chop the basil stems and set everything aside.
4 - Place the crushed garlic clove, basil, olive oil, and salt in a food processor and blend them until the basil is finely chopped. Here, we are using the excellent Breville Sous Chef food processor.

5 - Add the pine nuts and Parmesan. Then, blend until a creamy texture is reached.
