Healthy Green Cauliflower Rice

In this new episode, we are showing you how to make this tasty and healthy green cauliflower rice, perfect for any lunch or dinner!
How to make cauliflower rice?
It is very easy! You only have to put raw cauliflower in a food processor and blend it until it forms into granules that are about the size of rice grains. It can also look like couscous.
We made this cauliflower rice recipe dairy-free, ultra-creamy and rich for the winter season. However, this recipe is also light, fluffy, and low in calories.
What we love the most about this recipe is that it is easy to make. It will take you less than 20 minutes and can replace couscous or rice in any of your favorite dishes.

Green Cauliflower Rice
2 - Avocados
½ oz (16g) - Parsley
1 tsp (3g) - Oregano
2 - Garlic cloves
1 - Lime, juiced
1 - Cauliflower head
2 tbsp (28g) - Avocado oil
1 tbsp (5g) - Nutritional yeast
To taste - Salt
To taste - Pepper
To taste - Scallions

We advise that you prepare all the above ingredients before starting.
You will typically need: a scale, measuring cups, mixing bowls.
Green Cauliflower Rice
1 - To a high-speed blender (or like us a food processor), add the avocado flesh, parsley, fresh oregano leaves, and crushed garlic. Then blend together until smooth.
Tip: Here, we are using the excellent Breville Sous Chef food processor.
2 - Squeeze out the juice of half a lime to the avocado mix, and blend again.
3 - Cut the cauliflower in half using a sharp knife, remove the stalk and break apart the florets.
Tip: We recommend you use a chef's knife for this task. We love Japanese knives and recommend this quality kit from GLOBAL for home and professional chefs. We also love this reversible cutting board with integrated hand grips from John Boos.
4 - Add the florets to a food processor and pulse until finely chopped. Then, transfer to a large glass bowl and microwave for 8 minutes.
Tip: We store our ingredients in these mixing bowls from Duralex while cooking. We love Duralex for their quality products and low prices!
5 - To a large Dutch oven, add avocado oil and the cauliflower and toast for 1 minute on medium heat.

6 - Then, sprinkle in the nutritional yeast and season with salt and pepper.
7 - Stir through the avocado sauce.
8 - Finely chop some scallions to sprinkle over the cauliflower rice.
9 - Enjoy!
