We are so excited about today's recipe! The beautiful actress, designer, and conservationist Nikki Reed shared on her Instagram account this delicious healthy muffin recipe. As foodie enthusiasts, we couldn't let the opportunity to try her recipe pass!

Recently, she shared this delicious vegan and gluten-free recipe that we are sharing with you today, but with a little extra chocolate! Because everything is better with chocolate, right?
These tasty banana muffins are soft, chocolaty, gluten-free, vegan, dairy-free, and do not contain any refined sugar! Pretty amazing, isn't it?

Banana Muffins
2 - Ripe bananas
¼ cup (40g) - Coconut sugar
¼ cup (86g) - Maple syrup
¼ cup (65g) - Olive oil
1 cup (260g) - Applesauce
1 cup (113g) - Almond flour
1 cup (113g) - Ground flaxseed
2 cups (210g) - Oats
1 tsp (6g) - Himalayan salt
1 tsp (6g) - Baking powder
1 tsp (6g) - Baking soda
16 beans - Dark chocolate

We advise that you prepare all the above ingredients before starting.
You will typically need: a scale, measuring cups, mixing bowls.
Banana Muffins
1 - Preheat your oven to 350°F (175°C).
2 - Peel the bananas, break them into small pieces and add them to a large mixing bowl. Next, mash them using a fork until smooth.
Tip: We store our ingredients in these mixing bowls and mini glass bowls from Duralex while cooking. We love Duralex for their quality products and low prices!
3 - Add the coconut sugar, maple syrup, and olive oil to the mashed bananas and whisk until well combined.
Tip: You may also use a stand mixer. The KitchenAid Artisan Design Series and the KitchenAid Professional 600 Series are superstars among stand mixers and will look amazing in your kitchen!

4 - Add the applesauce and stir using a silicone spatula until well combined.
5 - Next, add the almond flour, ground flaxseed, oats, salt, baking powder, and baking soda to the batter and stir with a spatula until well incorporated.
6 - Finally, pour the oat milk into the bowl using a pouring jug. Carefully mix everything until well combined and let the muffin batter rest for 15 minutes at room temperature.
7 - Add muffin liners to a muffin pan and add about 2 tbsp (2 scoops) of muffin batter into each muffin liner using an ice cream scoop.
8 - Next, sink one chocolate bean in each muffin, leaving a little chocolate sticking out.
9 - Transfer the muffins to a 350°F (175°C) oven and allow them to bake for about 20 minutes.
10 - Once baked, the muffins will still be very soft. Therefore, let cool completely into the muffin pan before tasting.
