Very tender on the inside and crispy on the outside, this recipe is perfect for a fancy appetizer or to accompany a salad.

Gourmet Onion Rings
1 - Onion
2 oz (60g) - Kale
1 clove - Garlic
7 oz (200g) - Cream cheese
1 cup (120g) - Mozzarella
1 tsp (2g) - Smoked paprika
2 - Eggs

We advise that you prepare all the above ingredients before starting.
You will typically need: a scale, measuring cups, mixing bowls.
Gourmet Onion Rings
1 - Place the cream cheese in a large mixing bowl and microwave it for about 1 minute (or until nice and soft). Then, mix until smooth using a spatula. If your cream cheese was at room temperature long enough, you can skip the microwave step and smooth it directly.
2 - Add the salt, mozzarella, and smoked paprika. Then, mix until well combined using a spatula and set aside at room temperature.
3 - Peel and mince the garlic clove.

4 - Drizzle about 2 tablespoons of vegetable oil in a skillet, add the minced garlic, and sauté it over medium-low heat for about 1 minute.
5 - Add the kale and cook for 5 minutes. Once ready, add the cooked kale to the cream cheese and mix until well combined.
6 - Peel and slice the onion in large rings, place the onion on a baking tray covered with parchment paper (or a silicone mat), and fill the center of the onion with the stuffing. Learn how to stuff the onion rings here.
7 - Freeze the stuffed onion rings for about 30 minutes and up to 1 hour.
8 - Crack the eggs in a mixing bowl and mix using a fork until homogeneous.
9 - Dip the frozen onion rings consecutively in the flour, the eggs, the bread crumbs, the eggs a second time, and finally, the bread crumbs again.
10 - Pour a generous amount of vegetable oil into a skillet, place the gourmet onion rings in it, and cook them for about 3 minutes on each side over medium heat. You may use tongs or a spatula to manipulate them. When cooked, place the onion rings on a cooling rack (with a baking tray underneath) to drain the excess oil.
11 - Plate the gourmet onion rings and sprinkle with fresh parsley before tasting. We love the timeless elegance of marble and recommend these cute marble plates (porcelain/melamine).
