Discover our fancy brownie tart recipe with its chocolate nougatine and chocolate ganache!
After many brownies recipes shared on this channel, we wanted to make it fancy! This gourmet brownies recipe has everything that you ever wished for from brownies! It is packed with chocolaty and nutty flavors, it also has a creamy and fluffy milk chocolate ganache, and last but not least, a crispy chocolate nougatine.
This fancy brownie is flavorful and makes the perfect dessert for any occasion. We can’t wait for you to try it at home!

Whipped Chocolate Ganache
4.2 oz (120g) - Milk chocolate
2.8 oz (80ml) - Heavy cream (boiled)
7 oz (200ml) - Heavy cream (cold)
Hazelnut Brownie
2.1 oz (60g) - Butter
4.2 oz (120g) - Dark chocolate
1.4 oz (40ml) - Hazelnut oil
2 - Eggs
1.7 oz (50g) - Coconut sugar
1.4 oz (40g) - Flour
1 pinch - Sea salt
3 oz (90g) - Milk chocolate
2.1 oz (60g) - Hazelnuts
Chocolate Nougatine
0.56 oz (16g) - Xylitol
1 tsp (5g) - Water
½ tsp (1.5g) - Corn starch
0.45 oz (13g) - Butter
0.8 oz (25g) - Cacao nibs

We advise that you prepare all the above ingredients before starting.
You will typically need: a scale, measuring cups, mixing bowls.
Whipped Milk Chocolate Ganache
1 - Place the milk chocolate in a large mixing bowl and melt it in the microwave for 1 minute, in 30-second intervals. This will prevent the chocolate from burning. Then, use a silicone spatula to stir and melt any remaining chunks.

2 - Add the 2.8 oz (80g) of heavy cream to a small saucepan (or like us a saucier pan). Place over medium to high heat and bring to a boil.

3 - Once boiled, remove from the heat and pour over the melted chocolate. Use a silicone spatula to emulsify the cream and chocolate together.
4 - Finally, pour in the rest of the heavy cream and stir to combine everything together into a smooth ganache. Cover tightly, making sure the plastic wrap is in contact with the ganache, and refrigerate for 2 hours.

Hazelnut Brownie
1 - Preheat your oven to 320°F (160°C).
2 - Add the butter into a saucepan, place over medium heat, and let the butter simmer until it turns light brown. Then, shake the saucepan a few times until the color is homogeneous. Remove it from the heat and let it cool down at room temperature.
3 - Add the dark chocolate to a mixing bowl and microwave it until fully melted. Then, mix in the hazelnut oil and the brown butter until well combined and set it aside.
4 - Add the eggs and coconut sugar into a large mixing bowl and whisk until light and fluffy using an electric mixer.

5 - Then, slowly pour the chocolate mixture over the eggs while continuously mixing. Once all the chocolate is well incorporated, sieve the flour over the bowl. Then, add the sea salt, and set it aside.
6 - Roughly chop the milk chocolate and hazelnut using a sharp knife and add them to the brownie batter. Then, combine everything together using a silicone spatula until just combined.

7 - Grease a cake ring with baking spray and place it on a baking tray lined with parchment paper. Next, transfer the batter into the cake ring and spread it evenly using an offset spatula.
8 - Finally, bake the brownie for about 20 minutes in a 320°F (160°C) oven. Once baked, unmold it while still hot and let it cool completely at room temperature.
Chocolate Nougatine
1 - Preheat your oven to 356°F (180°C).
2 - Add the xylitol, water, corn starch, and butter into a small saucepan and bring to a boil.
3 - Stir the mixture using a silicone spatula, add the cacao nibs to the saucepan and stir until well combined.
4 - Then, transfer the nougatine to a tray lined with a silicone mat and spread it evenly with your spatula. Then, transfer it into your preheated oven and bake it for about 12 minutes.
5 - Once baked, let the nougatine cool completely at room temperature.
Finishing the Gourmet Brownies
1 - Whip the chocolate ganache until firm peaks using an electric mixer and transfer it to a piping bag with a round tip.
2 - Pipe the chocolate ganache on top of the brownie like so. Next, break the nougatine into smaller pieces, and place them vertically on top of the ganache to decorate the brownie.
