Gourmet Avocado Toast

Whether it is for breakfast, lunch, or even dinner, you can never go wrong with avocado toast. To make our healthy avocado toast, we used our whole wheat sourdough bread recipe, which is full of good nutrients and has an extraordinary flavor.
What’s magic about this avocado toast is that it may look fancy, but it is actually very easy to make. This tasty avocado toast is composed of delicious caramelized onions, mashed avocado with cream cheese, fresh shallots, and feta. And the stars of these avocado toasts are the soft-boiled eggs. These fancy avocado toasts are perfect to impress your friends and family, and we truly can’t wait for you to taste this recipe!

Avocado Toast
2 - Bread slices
1 - Garlic clove
1½ - Avocado
1 - Shallot
2 - Eggs
½ - Onion
½ - Lime
1 tbsp (24g) - Honey
2 oz (24g) - Cream cheese
1 tbsp (15ml) - Balsamic vinegar

We advise that you prepare all the above ingredients before starting.
You will typically need: a scale, measuring cups, mixing bowls.
Avocado Toast
1 - Fill a saucepan (or like us a saucier pan) with water and bring it to a boil.
Tip: All-Clad is the gold standard for professional quality stainless steel cookware.
2 - Place the eggs into the boiling water with a spoon (wooden/silicone), and cook them for exactly 6 minutes.
Tip: Make sure the eggs are at room temperature before putting them into the boiling water. Otherwise, the shell may crack.
3 - After 6 minutes, transfer the eggs to a mixing bowl filled with very cold water. Let the eggs completely cool down in it.

4 - Preheat your oven to 350°F (175°C).
5 - Brush the bread slices with olive oil using a pastry brush (boar/silicone).

6 - Cut the garlic clove in half on a cutting board using a sharp knife, and peel it.

7 - Make notches in the garlic clove with your paring knife and rub the bread with it.
8 - Place the bread on a baking tray lined with parchment paper and bake it at 350°F (175°C) for about 15 minutes.
9 - Meanwhile, peel and finely slice half an onion. Then, set aside.
10 - Take the peeled garlic clove and finely mince it.
11 - Place a stainless steel skillet over medium-low heat and drizzle about 2 tablespoons in it.
Tip: We love this professional set of stainless steel measuring cups and spoons.
12 - Add the onion into the skillet, and stir with a silicone spatula. Then, cook for about 3 minutes.
13 - Add the minced garlic and give it a quick stir. Then, cook for about 5 minutes (or until the onions start to caramelize).
14 - Stir in the honey and cook for another 3 minutes.
15 - Deglaze the pan with the balsamic vinegar, and cook for a final 3 minutes (or until the onions are well caramelized). Then, set it all aside in a small ramekin.
Tip: We use this porcelain pitcher for oil and small liquid quantities while cooking.
16 - Using a sharp knife, cut the avocado in half lengthwise, then in quarters. Peel off the skin of half an avocado and place the other half back in the refrigerator.
17 - Soften the cream cheese in a mixing bowl with a spatula. Then, add the peeled half avocado, and mash everything together using a fork.
18 - Cut the other avocado in half lengthwise and gently turn one half to open it. Then, carefully whack the pit with the knife, and give it a twist to remove it.
19 - Gently scoop the flesh around the edges with a large spoon. Then, place the avocado on a cutting board.
20 - Finely slice the avocado halves crosswise. Then, splay out the slices and gently work them inwards to start shaping a small rose.
21 - Using a spoon, spread the mashed avocado on your toasts in a thick layer.
22 - Grab some caramelized onions with tweezer tongs and place them on top of the mashed avocado.
23 - Add 1 avocado rose on each toast using a large icing spatula.
24 - Cut in half some cherry tomatoes using a paring knife.
25 - Finely slice the shallot with a mandoline slicer and set it aside.
26 - Place the tomatoes and shallot on both sides of the avocado roses in a pretty manner, along with some fresh feta.
27 - Gently peel the eggs and place them on top of the avocado roses. Then, add a few shallot slices onyo your toasts, along with some pumpkin seeds.
28 - Squeeze the lime juice on top of the eggs and sprinkle with the bee pollen.
