Gluten-Free Hamburger Buns

When you decide to cut down the gluten in your diet, it can be frustrating not being able to enjoy everything that is usually made with bread like burgers, pizza, or focaccia.

To remedy this problem, we developed a delicious, soft, and chewy burger bun recipe that is gluten-free and made with ingredients you can easily find in your favorite grocery store.

The 3 most important ingredients are:
- Gluten-free flour blend: we have been using it for years and love it for its good quality and reasonable price.
- Xanthan gum: this ingredient will give a nice chewy texture to your gluten-free hamburger buns.
- Psyllium husk: quite a surprising name indeed, but so important in your gluten-free recipes! This will allow the bread to stay nice and moist while also preventing it from being crumbly.

Hamburger Buns

5.3 oz (150ml) - Milk

1 tbsp (12g) - Dry yeast

8.8 oz (250g) - Gluten-free flour blend

2 oz (57g) - Xylitol

½ tsp (2g) - Xanthan gum

½ tsp (3g) - Sea salt

1 tsp (5g) - Baking powder

1 tbsp (15g) - Psyllium husk

1 - Egg

3 oz (85g) - Butter


Egg wash

1 - Egg yolk

1 tbsp (15ml) - Milk

We advise that you prepare all the above ingredients before starting.

You will typically need: a scale, measuring cups, mixing bowls.


Burger Buns

1 - Pour the milk into a pouring jug and microwave it for 1 minute (or until lukewarm). 

Tip: Pyrex is the gold standard of measuring cups, we love their quality and durability!

2 - Add the yeast to the warm milk, mix together using a fork, and set aside. 

3 - To a stand mixing bowl, add the gluten-free flour blend, xylitol, xanthan gum, sea salt, baking powder, and psyllium husk. Then, mix all the dry ingredients together using the paddle attachment.

4 - Crack the egg into the yeast mixture and pour all the liquid ingredients into the flour mixture, while continuously mixing. 

5 - When the dough is homogeneous, add the room temperature butter and knead for 5 minutes until the butter is fully incorporated. 

6 - Scrape down the sides of the mixing bowl with a bowl scraper to form a ball. Cover with plastic wrap and refrigerate overnight. 

Tip: Help the planet by choosing biodegradable food wrap instead of plastic :)

  

The next day...

 

7 - Transfer the dough to a lightly floured surface and divide it into 4 little balls with a sharp knife or a bench scraper (metal/plastic/wood). Gently shape the burger buns into large disks and transfer them into a baking tray lined with parchment paper (or a silicone mat). Cover with a towel and let proof for 2 hours.

Egg Wash 

1 - Into a small bowl, whisk one egg yolk together with a tablespoon of milk until fully incorporated. 

Tip: We store our ingredients in these mixing bowls and mini glass bowls from Duralex while cooking. We love Duralex for their quality products and low prices!

2 - Brush the burger buns with egg wash using a pastry brush (boar/silicone) and sprinkle some sesame seeds on top. 

3 - Finally, bake in a preheated 375°F (190°C) oven for about 25 minutes.
