Gluten-Free Cinnamon Rolls With Cream Cheese Frosting

Today, more and more people look into the gluten-free diet. As you may know, most gourmet recipes are often prepared with wheat flour, leaving out all the gourmands who can not consume gluten.
To remedy this, today we are presenting you this delicious and easy gluten-free cinnamon rolls recipe.
We made these tasty gluten-free cinnamon rolls with yeast, whole milk, xylitol, coconut sugar, and our favorite and must-have ingredient: the gluten-free flour blend from King Arthur.
This flour blend will allow you to make any gluten-free recipe. However, keep in mind that gluten-free flours absorb much more liquid than wheat flour. As a result, the number of liquid ingredients will always be greater in a gluten-free recipe compared to a recipe with wheat flour.
Pro tip: Gluten-free flours are often quite complicated to knead because they contain more liquid ingredients and are therefore more sticky. For homogeneous and 100% successful kneading, we recommend that you use a stand mixer.

Dough
1 cup (235ml) - Milk
2½ tsp (10g) - Dry yeast
20.5 oz (580g) - Gluten-free flour blend
1 tsp (4g) - Xanthan gum
¾ tsp (5g) - Himalayan salt
½ cup (100g) - Xylitol
3 oz (85g) - Butter
2 - Eggs
Cinnamon Filling
3 oz (85g) - Butter
⅔ cup (100g) - Coconut sugar
2 tbsp (12g) - Cinnamon
Egg wash
1 - Egg yolk
1 tbsp (15ml) - Milk
Cream Cheese Frosting
8 oz (226g) - Cream cheese
⅓ cup (50g) - Xylitol
1 tsp (5g) - Vanilla extract
⅓ cup (80ml) - Milk

We advise that you prepare all the above ingredients before starting.
You will typically need: a scale, measuring cups, mixing bowls.
Dough
1 - Pour the milk into a measuring cup and heat it in the microwave for 45 seconds.
2 - Add the dry yeast to the warm milk and gently mix using a fork before setting aside.
3 - To a large stand mixer bowl, add the gluten-free flour, xanthan gum, Himalayan salt, and xylitol. Mix all the dry ingredients together using the dough hook attachment.

4 - With the motor still running, pour in the milk and yeast mix, allowing the dough hook to bring them together.
5 - Melt the butter in the microwave and then add it to the churning dough. Then, add the two whole eggs, plus an additional egg yolk. Once everything is added, allow the stand mixer to knead the dough for another 5 minutes.
6 - Transfer the kneaded dough to a clean bowl. Cover with cling wrap and then place in the fridge overnight.
The next day...
Cinnamon Filling
1 - Add the butter to a mixing bowl and melt it in the microwave for 30 seconds, just to soften. Then, use a silicone spatula to stir until creamy.
Tip: We store our ingredients in these mixing bowls and mini glass bowls from Duralex while cooking. We love Duralex for its quality products and low prices!
2 - Next, add the coconut sugar and cinnamon to the butter.
3 - Mix until everything is well combined and set aside.
Assembling the Rolls
1 - Sprinkle some gluten-free flour over a large chopping board before placing the chilled dough into the center of the board. Gently push it flat and also dust it with flour.

2 - Using a rolling pin, roll out the dough to an 18 x 12 inch (48 x 31 cm) rectangle.
3 - Take the cinnamon filling and place spoonfuls of it across the surface of the dough. Then, using an offset spatula, spread evenly across the whole surface of the dough.
4 - Then, starting at one of the long sides of the rectangle, roll the dough tightly into a pinwheel shape.
5 - Trim the ends of the log and then, using a sharp knife, cut the dough into segments, making about 8 to 10 rolls.
Tip: Sabatier knives are excellent french blades we recommend for professional and home cooks.
6 - Add the rolls to a large stone baking dish, stand each roll up, spacing them out slightly. Cover with cling wrap and allow them to rest at room temperature for 2 hours.
Egg Wash
1 - Preheat the oven to 365℉ (185℃).
2 - Add the egg yolk and milk together in a small bowl and whisk together.
3 - After the rolls have rested, use a pastry brush (boar/silicone) to generously brush the egg wash over each roll.
4 - Bake the cinnamon rolls in a 365℉ (185℃) oven for about 20 minutes.
Cream Cheese Frosting
1 - Add the cream and xylitol to a large mixing bowl and cream together using a whisk.
2 - Then, whisk in the vanilla extract and milk, combining everything into a smooth paste.
3 - With the cinnamon rolls baked, pour over the cream cheese frosting, generously covering every cinnamon roll.
