Gluten-Free Chocolate Muffins

These rich and delicious chocolate muffins are made with simple ingredients and are packed with an intense chocolate flavor! They taste amazing and are very easy to make! Perfectly chocolaty and moist, these muffins are perfect for breakfast or as a snack!
When making recipes with chocolate, it is recommended to use a good quality one. Usually, the easy way will be to go to the grocery store. However, their chocolate often contains large amounts of added sugar.

3 - Eggs
4 oz (115g) - Xylitol
4 oz (115g) - Butter
3.5 oz (100g) - Dark chocolate
4.4 oz (125g) - Gluten-free flour
1 tsp (5g) - Baking powder
3.5 oz (100g) - Milk
6.25 oz (180g) - Milk Chocolate

We advise that you prepare all the above ingredients before starting.
You will typically need: a scale, measuring cups, mixing bowls.
Gluten-Free Chocolate Muffins
1 - Preheat the oven to 330°F (165°C).
2 - Crack the eggs into your stand mixing bowl, add the xylitol and whisk on high speed until nice and fluffy.

3 - Combine the butter and dark chocolate into a mixing bowl and microwave it for about 1 minute or until melted. Then, mix the melted chocolate and butter together until homogeneous using a silicone spatula.

4 - Pour the melted chocolate mixture over the whipped eggs and slowly mix until well combined.
5 - Turn off the stand mixer and add the flour and baking powder to the bowl. Then, mix using the paddle attachment until just combined.
6 - Next, slowly pour the milk into the muffin batter while continuously mixing and allow to mix until the milk is fully incorporated.
7 - Finely chop the milk chocolate and add it to the batter. Then, mix until well combined.

8 - Place some muffin liners in a muffin pan, and add 3 scoops of batter in each liner. Then, bake at 330°F (165°C) for about 20 minutes. Once baked let them cool completely at room temperature.
9 - Use the topping of your choice, here we used whipped cream and cocoa nibs.
