Gluten Free Carrot Cake with Cream Cheese Frosting

Who doesn't love the smell of freshly baked cake? After weeks of finetuning, we finally came up with this healthy carrot cake recipe that is soft, moist, and light! You can enjoy this carrot cake as is or like us with a delicious cream cheese frosting.

This gluten-free cake is so easy and will take you less than 15 minutes to make. It was made from simple ingredients, the main components being: almond flour, coconut flour, corn starch, xanthan gum, coconut oil, and maple syrup

Carrot Cake

6 - Eggs

⅔ cup (74g) - Coconut oil

⅔ cup (210g) - Maple syrup

4 tbsp (40g) - Corn starch

1 cup (128g) - Almond flour

½ cup (56g) - Coconut flour

2 tsp (10g) - Baking soda

1½ tsp (4.5g) - Five spice

2 tsp (10g) - Baking powder

2 tsp (7g) - Xanthan gum

1 tsp (6g) - Sea salt

2 cups (235g) - Grated carrots

⅔ cup (115g) - Diced mango

2 tbsp (30g) - Apple cider vinegar

⅔ cup (85g) - Pecans


Cream Cheese Frosting

8 oz (226g) - Cream cheese

8 oz (226g) - Greek yogurt

⅓ cup (100g) - Maple syrup

We advise that you prepare all the above ingredients before starting.

You will typically need: a scale, measuring cups, mixing bowls.


Carrot Cake

1 - Preheat your oven to 360°F (180°C).

2 - Using a box grater, grate a few carrots in a mixing bowl until you obtain 2 cups (~235g) and set it aside. 

3 - In another large mixing bowl, whisk the liquid ingredients: eggs, melted coconut oil, and maple syrup before setting it aside.

Tip: We store our ingredients in these mixing bowls and mini glass bowls from Duralex while cooking. We love Duralex for their quality products and low prices!

4 - In a separate bowl, whisk all the dry ingredients together: corn starch, almond flour, coconut flour, baking soda, five-spice, baking powder, xanthan gum, and sea salt.

5 - Pour the liquid ingredients over the dry ingredients and whisk until well combined. 

6 - Add the grated carrots as well as the diced mango and gently stir to combine with a silicone spatula.

7 - Stir the apple cider vinegar as well as the pecans into the cake batter and transfer it all to a cake pan lined with parchment paper and slightly greased

8 - Spread the batter throughout the pan and bake at 360°F (180°C) for about 30 minutes.

9 - Once baked, gently unmold the cake and let it rest on a cooling rack to cool completely.

 

Cream Cheese Frosting

1 - Combine all the ingredients into a large mixing bowl and whisk until nice and smooth.

Tip: You may also use a hand mixer. We recommend this 7-speed hand mixer from KitchenAid for its quality and elegant design.

2 - Once the cake is cold, carefully cut it in half (to make 2 layers) using a bread knife.

3 - Spread half of the frosting evenly on the first layer with an icing spatula and add the second layer of cake. Then, spread the remaining cream cheese frosting evenly on top and refrigerate for 1 hour.

4 - Decorate with fresh pecans and diced mango. 

5 - Enjoy!
