In today’s video, discover our gluten-free banana bread recipe. This delicious cake is soft, chewy, and packed with delicious spices like cinnamon, ginger, clove, and coriander.

Gluten-Free Banana Bread

2 cups (270g) - Gluten-free flour

¼ tsp (1g) - Clove

¼ tsp (1g) - Coriander

2 tsp (6g) - Cinnamon 

¼ tsp (1g) - Ginger

2 tsp (15g) - Baking powder

6 - Bananas

2 - Eggs

3.1 oz (90g) - Maple syrup

6 oz (170g) - Butter

¾ cup (60g) - Xylitol

We advise that you prepare all the above ingredients before starting.

You will typically need: a scale, measuring cups, mixing bowls.


Gluten-Free Banana Bread

1 - Preheat your oven to 350°F (175°C).

2 - Add the gluten-free flour, clove, coriander, cinnamon, ginger, and baking powder to a mixing bowl. Mix until well combined using a fork, and set aside. 

Tip: We store our ingredients in these mixing bowls and mini glass bowls from Duralex while cooking. We love Duralex for their quality products and low prices!

3 - Peel 5 bananas, add them to a large bowl, and mash them using a potato masher.

4 - Add the maple syrup and the eggs to the mashed bananas. Whisk until well combined and set aside.

5 - Add the room temperature butter and xylitol to a stand mixer bowl and mix using the paddle attachment until smooth and creamy.

6 - While the mixer is still on, slowly add half of the dry ingredients, then half of the mashed bananas, and mix until homogeneous.

7 - Finally, add the remaining flour mixture and mashed bananas to the cake batter. Mix until fully combined.

8 - Next, line a loaf pan with parchment paper and pour all the batter into it. For decoration, slice the last banana and place the slices on top of the cake.

9 - Transfer the cake to the oven and allow it to bake for about 95 minutes at 350°F (175°C). Once baked, let it cool completely at room temperature inside the loaf pan.
